    Hi Sweet Friends, Today, I’m sharing a recipe for an EINKORN Apple Butter Cake. It’s a ONE BOWL recipe that makes it so easy to make! Have you ever baked with Einkorn Flour? It’s an ancient grain that is believed to be the first form of wheat. It’s lower in gluten and some find it easier to digest than modern wheats.     Mary, you are a delight! I love watching you and I feel like I can do anything when I watch you do it. My Mom and Grandmother called this cooked icing Ermine icing. It is lovely and creamy. I find it needs to go on the cake he same day it is made. I will try this with the added apple butter and spices. I must say I have never done it any other way but plain vanilla buttercream. This is beautiful. I can't wait to make this.

    Oh yes, I would love to learn how to make applebutter! We tasted it when we were for some months in Missouri, and got hooked. But it's nowhere to find in my country :( Applesauce is something we do have here, but that's about it.
    Thank you for your super thorough and detailed videos!! I love learning from you, and as soon as I figured out how to make applebutter, I am definitely going to make this for my birthday (coming up soon!)

Love, Mary PS - as to apple butter - it's very much like making applesauce. If you don't have a food mill, you peel and cut up the apples and cook them until they are very soft and you add lots of spices like cinnamon, cloves, and allspice. And then you puree everything.     I'm curious if you can create a couple useful items that are keto-friendly? Utilizing almond flour and/or coconut flour? I have a feeling your end results would be better than what's out there currently. Replacing everyday bread, crackers, etc. is what people need the most. I am really looking forward to seeing what you can produce!!
    Most recipes call for cheese, egg, & almond flour to create a biscuit, or chaffle. That's a waffle that's KETO. Those cakes are looking great!! Thank you for ALL you do. Have a beautiful weekend. ♥️♥️♥️♥️♥️♥️♥️♥️♥️

      This is such an interesting idea! And I just bought some coconut flour (and I've got homemade almond flour from soaked almonds in my freezer!) ... so I am going to be experimenting and see what I can come up with. I am excited to see if I can create something easy to make and most important...tasty! Thanks for the inspiration!! So far I am really impressed with the results and will have some videos coming out next month all about it! Stay tuned! :-)

      *Cauliflower is what is used, with some egg & almond flour to make a pizza crust. HUGE seller & very hot item at grocery store. That, & having a 'vehicle' to make sandwiches, crackers, etc. Is one of the biggest problems people have. There's a new thing, called, chaffle, that represents a KETO friendly waffle, or sandwich bread. But, it's very 'eggy'. Prepared in a miniature waffle maker. Many feel they wasted money on the 'DASH' waffle maker. Some are still using their standard waffle maker. Those things are eaten the most on KETO. If you want a quick crash course on foods, etc., go to Dr. Berg's FB group. There's also the FB chaffle group. Some people in there are still VERY upset about what measurements to use, HOW the chaffle should be prepared, etc. The number one goal of anything KETO is to TRY to not eat any carbs, OR, never go over 20 or 30 carbs per day, AFTER deducting the fiber of an item from total carbs, reducing carb count even more. I'm very excited to see & use what you create. You're very intelligent, so I know you'll knock it out of the ballpark!! It's also a super great way to get many more subs.     You inspired me to bake today, was rainy and grey. So I threw a nice loaf of no sugar at all loaf together (bananas, flour, baking p&s, egg, some homemade quark, coconut oil and enjoy life chocolate chips) and then my oven started throwing error codes again..... guess baking is out until I get it fixed or replaced 🤕🤕🤕 but my loaf got done, bit too moist, however still DELICIOUS!

    Oh I LOVE this recipe Mary. Thank you. There are just so Few recipes for einkorn flour on youtube, especially for deserts. Most are always for bread and sourdough bread. I am definitely making this. I love my einkorn flour, it has a very nice flavor and I know this cake will be wonderful :)

      My Quaint Cottage - Thanks for visiting! With 100% whole grain, you’ll need about 3/4 cup buttermilk but if you sift your hard wheat into a homemade all-purpose the half cup should be enough but you can gauge it by looking at the consistency that I show in the video. Love, Mary❤️😘❤️

    Looks delicious. Our internet has been out for about a week. On Friday we installed a new phone jack as some of the lines on it had corroded. Today a technician found a short in the box outside and then it finally came back on. I'm worried about my sister. She got in a car accident with her oldest daughter Akira who already graduated high school. My mother and brother dropped by to tell me yesterday since our phone won't work if the internet isn't working since we use magicjack. Akira was driving so Sis got most of the impact. She already had heart problems as well as hyperthyroidism and Grave's Disease. My birthday is this week. I want sinigang and two donuts from a local bakery. Might have to get an Angel food cake or a panettone to share as Daniel will only eat those. With all other cakes he just eats off the icing.

      @@MarysNest She has to do some physical therapy. Other than that she's fine. My birthday was the worst one yet because Daniel whined for hours and his is high pitched which gives me headaches. The next day was better. I got my sinigang. It was a simple one of pork roast, one broccoli, and the tamarind souring agent. We both wanted more. I usually put lots more vegetables in mine but it wasn't in my budget.

      @@MarysNest Busy. busy, busy. I was going over your past recipes. Somehow, I was making fruit vinegar and it turned into alcohol. I was wondering if I did something wrong? LOL :-)

      Jumpoff A - LOL!! Not at al!! It actually turns to alcohol first and then over time it develops into vinegar. But I have heard from some people that it really just stays alcohol for a very long time before it turns into vinegar...especially if the fruit is very sweet. Can you believe this....someone here on YT told me that this is how prisoners make hooch. Oh heavens!! See if you leave it for a few weeks if it turns to vinegar. Love, Mary🤗

    I'm using white sugar right now. However, I do want to change that up and get something that has nutrition in it. What are the best, most nutritious sugars to buy? Thanks!!

      Great question. If you can find dried can juice usually sold under the name “Sucanat” that is a great option. It has all the vitamins and minerals intact. Other great options are maple sugar, maple syrup, honey...preferably raw, date sugar and date syrup, and molasses. As for alternative sugars...I am not too much of a fan of them but if you need to make things “sugar-free”, then the herb stevia can be an option. Hope this helps. Love, Mary❤️🤗❤️

    When you sift the flour is there a portion that is discarded ? Is it the same as blending it finer ?

      Hi Karise, Great question, Yes, there is a portion of the bran and germ that is discarded. I usually throw it into my compost pile or add it to a cereal I soak overnight to increase the nutrition.       Yes, it does. Search online and you should see a sources for US grown organic einkorn. There is also organic einkorn from Italy (Jovial) but I am not sure how easy that would be to get right now given the present circumstances. Love, Mary

    Are you familiar with a one pan and a fork recipe called A Crazy Cake? I'm wondering if this flour would work for it, since it's an all purpose flour.

      Hi Linda, Yes - I have seen those cakes. I think this would work. It may just be a slightly denser cake. Even though this is an "all-purpose" version of Einkorn flour, it is still not at the same consistency of modern day wheat all purpose flour - especially when it is home sifted. But I think it would be worth a try. Whenever you add buttermilk (or other similar substitution) when making a cake, it always seems to save the day - so to speak. It almost seems to make any cake recipe foolproof! LOL!! Love, Mary

    Can you use monk fruit/erythitol sugar instead of sugar? Watching my carbs. I’m sure I spelled it wrong 😂

      Mary's Nest cannotwait to make this Saturday. I LOVE apple butter. We have a quaint country store near me that makes everything from scratch and their apple butter is so good it’s hard not to eat it all with a spoon.

    You inspired me to bake today, was rainy and grey. So I threw a nice loaf of no sugar at all loaf together (bananas, flour, baking p&s, egg, some homemade quark, coconut oil and enjoy life chocolate chips) and then my oven started throwing error codes again..... guess baking is out until I get it fixed or replaced 🤕🤕🤕 but my loaf got done, bit too moist, however still DELICIOUS!
