In my experience the speed is sometimes slow to update. Tested side-by-side with a mediocre bike sensor I got a few months prior
This is because it is relying on the GPS. But If you install the speed sensor on your bike, it will reflect the data faster.

If you sync with Strava its also a way to get your heart rate information onto Strava since it doesn't use the Apple Watch as a heart rate sensor.
