I have mixed feelings about this competition. On the one hand, the skill required to compete well is insane. On the other hand, the lengths these people are taking to impress the judges would never be replicated for the public. Meaning, this BBQ only exists in the judges tent, it doesn't reflect the real world
Yeah lol that’s the point of comp bbq pushing bbq to perfection. But in all honesty comp bbq taste the same as your local bbq spot
Incorrect. Many BBQ joints and restaurants and chefs etc etc, would be able to replicate it, in various ways in the places they work.
Just because it's a competition, doesn't mean it cannot be done for the public buddy.

@@lukey1989 He's not saying it can't be done for the public, he's saying most of them would never do it for the public. The time/care/cost for doing competition BBQ is much higher than doing commercial BBQ and people just either don't care or don't want to pay more.

I was a KCBS judge and since have stopped judging due to two factors.
The amount of food you are eating during a judging. You have six portions of each meat to judge. By the time you complete all four categories, you have consumed closed to two pounds.
The second reason, in my opinion, the meats prepared don’t taste of bbq. Meats are injected and sauced to the point that you don’t taste the meat. Is this chicken or is this a candy apple. Again I stress, this is my opinion. Bbq enjoyed at a bbq restaurant is comfort food and not the same as competition bbq. There goal is to create the perfect bite. I just don’t agree with the methods competitors use.

How do they tally the scores? Is there a correction factor? For example, what if one table regularly rates lower than another table? Not all judges are eating all 505 (x4) samples.

probably a bbq taste thats tailored for judges, imagine the background intel sourcing going on over who's tasting and their personal preferences..... i doubt they are all tasting a control, then the offered product, seems to be an environment where chance plays as much as a part as technique.
the table captain is the only one who can walk back and forth from the table to bring the meat

I was lucky enough to be a judge for the Great Australian Pie competition and I gotta say it's not as easy as it sounds but was a great experience...

6:35 she says part of your score is the garnish. That is 100% incorrect. Garnish is optional. You score the appearance on the look of the meat only.

To be a judge must be difficult task. The food looks real good.
As a Mexican American who loves Mexican food, there’s nothing like a good old fashioned American BBQ. I prefer a BBQ over a carne asada (Mexican style BBQ) any time.

This is all subjective. You’re competing for that one judge. This isn’t the deciding factor for who has the “best” BBQ. There is great BBQ in every corner of the world. Some might not even be on the radar.

The comments are not what I was expecting. These people enjoy competing and the subjective judging. Just like any other competition it isn’t supposed to replicate the real world. This is peoples passion and a level of seriousness that somebody like me who has no idea what is going on shouldn’t criticize.
All those slow motion shots of middle to older aged men stuffing meat in their mouth is a bit much. Would be nice to add the ladies in there for their slow mo shot
What happens if the judges die of a heart attack before they finish scoring your meat? I assume this is an hourly occurrence.

I wouldn't call it "free" if one stays overnight at a hotel, plus having to drive to and from the event. It was not unusual for me to spend upwards of $500 just to that "free" bbq !
