This is gonna be great with my NYC terrace-grown Thai basil lol But just a punch-up tip that totally works for me - instead of thinning out the sauce with water before cooking, I really like using broth, which I freeze in ice cube trays just for occasions like this. Cheers!

That recipe is almost identical to the one given to me years ago by a friend from Thailand. The only difference was she used chicken breasts and Thai chili peppers and thickened with cornstarch! That one dish is why I grow my own Thai basil! I can't find it fresh here any more, so I grow my own!

After I ate this a light bulb just about exploded in my head because this tasted so much like the Drunken Noodles from my favorite Thai place that I went running to my local Asian grocery store just to see if I could make it. So I bought rice noodles and followed this recipe swapping the jalapeno with Thai chili peppers and quadrupling the sauce for the noodles and low and behold, I got Drunken Noodles. I had always been intimidated by trying to make Thai food but this was a real winner for me, thank you Flo, this is my husband's new favorite even super yummy with chicken 🤤

Love your channel, Flo and Dude. I live not too far from you in Kelowna, BC (in the Okanagan valley). We laugh up our sleeves when Vancouverites complain about the heat. Of course, just about everyone here has some form of air conditioning. We get 36 degrees or warmer here nearly every summer here, often for extended periods of time. Two days ago we had highs of 38 or more for 4 straight days. Today we cooled down to 36 degrees. Last year (admittedly rather warm even for us) we had several consecutive days in the mid 40's. By contrast, the warmest day ever recorded in Bangkok was 40.2 Celsius. You might be better advised to go to Thailand to cool off!

Are there any sauces you regularly use which need to be refrigerated? I know soy sauce doesn't need to be refrigerated, however I have no clue about Housin, Oyster Sauce. This looks great
I bought seedlings and they looked so puny and sad for the first few weeks and the temp was cooler than normal. So I put a plastic cover over them, hoping to create a mini greenhouse. But then I ended up scorching the leaves. 🤦🏻♀️ I picked off all the burnt leaves and then the weather started getting hotter and the basil just started growing like crazy. So I think pinching them and the heat helped a lot!
Hi Flo, thank you for replying. I bought 3 Thai basil plants from Home improvement place and only one is doing well. Not sure what happened as I took good care of them. The heat in CA is scorching at the moment too but the other 2 plants are barely holding up.

Oh, I couldn't find the ABC Sauce so I just used molasses and soy sauce. I also cut my onions that way, it's just easier and it looks prettier with the other veggies.😁
The sauce seems to be thin and watery. Perhaps it could use a little cornstarch slur . I'd actually marinate mine with cornstarch, Chinese cooking wine, soy sauce and a bit of baking soda for like 10 minutes or so ,but that's just me.
Most people here do not have AC because “it doesn’t get that hot here” but then we have these heat waves and everyone is kicking themselves for not having AC installed. Sure… as mentioned, you can absolutely use dried red pepper.

If you use italian basil you can chuck in a star anaise or two in to give it a bit of the aniseed flavour the thai basil has.

I keep oyster and hoisin in the fridge mainly because my mom did. And kecap manis because it’s new-ish to me and the bottle says to.

It's a bit more licorice-ey. It's got the strange tang of licorice more than Italian basil does.
A little galangal or ginger might be a good addition.
What kind of wok do you use? is it carbon steel?
