    I think with aebleskiver that you don’t flip them, you partially roll them so some raw batter spills into the hole and keep doing that until you’ve made a full turn. I think they’re supposed to be kind of hollow like beignets

      Dane here, and yes that's how you flip them but they wont be hollow the dough will raise up and they'll be fluffy inside and crispy outside.

    Dane here. For the aebleskive: don’t use pancake batter use aebleskive batter.
    When baking them only flip them a small amount at a time (think of asbleskriver as an apple not a pancake). For the flip use a knitting needle.
    Don’t put filling inside. Eat them with jam and sugar (dip them in jam and afterwards in the sugar)

      Yes, I turn them a quarter and put in a little bit more batter. This way they end up being round.
      Æble means Apple, and some used to put Apple inside.

      All this, also my family makes these for Christmas morning every year. We do bananas as well and some times chocolate. For sure powdered sugar is a necessity

    Aebleskiver: start the dough (no filling). When it starts to get crusty on the part in contact with the pan, roll it about a quarter turn so the raw middle flows out into the pan. Repeat until you’re almost finished, pop the filling in, make the final turn so the opening seals.

    You really need to try a 'poffertjes pan' it's a Dutch mini pancake and you eat a bunch of them with butter and powdered sugar. They are flatter so they cook better! Loooove to eat poffertjes 😍

    You can make Japanese takoyaki in the æbleskiver pan too. Its a savory batter with little bits of octopus in it(tako means octopus in japanese). It's delicious!

    For the ebelskiver pan, the key is cooking in a lower flame, I honestly recoomend the non-electric one so that you can control the flame much better also try putting a lid on it. I will cook so much better and you can flip easier!

    i bought an ebilskiver pan decades ago and i make them with the preserves in the middle, but also with ganache! make sure it's cold and scoop little balls of ganache with a small ice cream scoop (like really small). i do this ahead and keep it refrigerated. also, i make the ebilskivers and then freeze them. omg toast them in a toaster oven and serve with whipped cream or vanilla ice cream (especially the ones with ganache). it's to die for! the reheated ones get a slight crisp to them.
    to flip them, take a chopstick in each hand. one pushes along one side and the other helps to guide the push. in other words, as one hand pushes, the cooked side shows up on the opposite side. use the other chopstick to pull on the cooked part. like a ball rotating.
    also, cook them a little longer than you think you need to if you have a filling.

    I’m telling you Rachel, you NEED to try a Norwegian “osthyvel” it’s a common kitchen gadget used in most Nordic countries and it slices block cheese in to absolute perfect slices 👌🏼

    For the mini pies, maybe if you used flour instead of spray, it may not stick as much? And maybe the sushi roller, you add a bit less rice, then your veg/meat, then more rice? I’d give each of these a try!

    I used to work at a Danish museum and I made thousands of aebelskiver. I used a wooden skewer to turn them, not a chopstick, and the batter recipe is really key. I would really suggest that you have someone that’s an expert walk you through your first time making it. Good luck!

      You can also just take a wooden chopstick and make it a bit sharper using a pencil sharpener 😉

    aebleskiver definitely has a learning curve but I use one chopstick and make a J motion to flip them. I use a cast iron pan on the oven so probably better temperature control than that appliance

    What you're suppose to do is turn it like 2/3 so the uncooked dough pours out and then the last 1/3 to complete the dome/sphere shape.

    I have that same ebelskiver pan. I'd recommend cooking one or two and then testing them for doneness. That way you can figure out your timing. (You can also just throw them back on if they're not done in the middle.) Good luck figuring it out-- they're one of my favorites. ❤

    I found that sushi maker on tiktok, you have to lay the insert flat and fill it, then latch it in the middle and roll!

    Hej Rachel when making æbleskiver her a tip for you wen you flip dem don’t flip them Al the way you flip them 1/2 way then come the filing in and little extra batter and then you flip them rest of the way, do the same with the plan ones to, you can putt Appel slices in them to. sorry for my spelling and greetings from Danmark

    They make crescent dough sheet that are not pre perforated just a heads up 😉 also I think puff pastry would have been a kinder more forgiving dough for those molds

    We use a very thin knitting needle to turn them. Also try and put cardemomme in the batter. We don’t put filling in, but dip them in powdered sugar and jam.

    My grandma (and her mom, born and raised in Denmark) used a tiny crochet hook to flip aebleskivers. The crochet hook she used is for making lace so it's minuscule, 1.5 - 2.25mm. We love them!

    I’m no aebleskiver expert but I am a takoyaki expert and we only do a quarter turn at a time adding more batter each time. Then, keep moving them once they have become round so they cook evenly! You can also purchase takoyaki picks that make this sooo easy! There is probably a similar tool for aebleskiver.❤

    I use two bamboo toothpick like sticks that are about 3" long to turn the mini pancakes. You sort of tip the uncooked batter back in the reservoir as you turn it. I love them so much for a quick sweet treat.

    That first ‘pie thing’ in the beginning is called a Pastie in the UK! And is savoury. The half circle shape is easier just to fold over yourself. What you did is more like a McDonalds pie in the UK

    If you want the batter to be cooked more try covering it before flipping. That might help cook the batter more.
    We have a similar pan and we use it for takoyaki (Japanese octopus balls) so you should try making that. It works well. It’s like a savoury molten lava Tim Bit with octopus filling. Lol.

    I don't know what's the gadget called but in the video you told it's used for dainish dessert. In South India we use it to make a Savory breakfast dish called paddu which I recommend you to try it ❤

    Be careful not to flip your dough after you cut it out. You sprayed the cutter, which gets spray on one side of the dough, so if you accidentally flip it, it won't seal. Just an idea.

      Turnover dough should be filo (phyllo) dough. Very very thin and very very flaky. She used crescent roll dough, which is different.

      No, they’re different. Crescent is flaky, laminated dough but turnovers are less dense, much more light and airy without all that butter, I believe.

    Having made both mini pies and regular size pies many times, I have to say that mini pies take so much longer to make (because of the number of them), but they're also so much better for some reason. Maybe it's the crust to filling ratio. I don't know. But no matter how much more time it takes, I'm always making the mini pies instead.

      I have no shame, I love raw dough lol! 🫣🤭 Cookie dough, bread/pastry dough, batter…30 years of eating raw dough with raw flour and never had an issue. Never once had food poisoning either. Sure there’s risk, but there’s risk with almost anything. It’s too delicious not to indulge every now and then!

    Hi Rachel, how are you today? The little pie molds, instead of spraying them, I would dip them in flour, they release much easier. Like you did, sealing them with a bit of water and a small brush will suffice.

    We use a fork to turn the æbleskiver, but turn it slov so the batter can run a little, to make a better cirkle

    I love this. For the æbleskiver you should use the correct batter that would be easier. But the trick is to let them cook a bit. flip them a quarter way around when som of the batter is still some how liqued let it sit and the turn them again

    In my country we call the ‘little pancakes’ poffertjes. You should fill like 1/3 in the pan instead of 2/3Z then the result will be much better I think.

    The pancake thingys we call them poffertjes in the nerherlands we dont fill them but we put powdere sugar on it and a bit of butter wich melts or jam or ig you call it maple syrup? Put less bater in the thingy and twist them with a fork whe they come lose from the bottom.

First of all, we all have been in your shoes hahaha but the way to do it is to get them half way up first so they’re standing vertically and let some of the batter pour into the middle and then flip them all the way :) or do like the majority of us and get them from the freezer section hahaa

    There is a German recipe for the aebleskiver pans. My former in-laws called them Fudgins. You did make a dough for those which contains yeast. I can sent you the recipe if you are interested.

    I learned something today!! At 61 I never knew it was unsafe to eat raw flour (just as is eggs, I knew) cuz the flour could contain bacteria that is killed when cooked! 🤷‍♀️😲🤷‍♀️

    When I make æbleskiver i turn it halfway, so the nottom part of the "half ball" is still in the pan, it's shouldn't be set, it only need to barely form a shell/crust. Let that set a little and turn it so the opening is now in the pan.

    Rachel you dont use chopsticks but something you can stab through the edge of the æbleskiver like a fork and no they are nothing like pancakes. We dont use a machine either but a real iron pand called a æbleskive pande that goes on the stove. You also need to grease the pand each time you put new batter in. And you need to regulate the temperature throughout the fyring process otherwise you you get burnt outsider and raw in the middle.

    No idea about Danish aebleskiver, but I feel like the method to making them is similar to Japanese Takoyaki, where the batter is a bit thinner, and can be rolled to cook into a circle. The holes is the machine are a lot deeper compared to a Takoyaki one so a thick batter may be right?

    Don't fill your æbleskiver. Use jam as a dipping sauce along with powdered sugar.
    (The way to turn them is described brilliantly elsewhere.)

    Look up Takoyaki videos. They are very similar to the danish desert and you might learn how to flip the balls better. It’s pretty cool how they make them
