Delicious Mexican cornbread with a Southern twist

  • This is the basic recipe for making Mexican cornbread.
    3boxes of jiffy corn muffin mix
    3 eggs
    enough milk to mix until smooth
    1 pound of ground beef
    a half cup of white onion
    a 16 ounce can of diced tomatoes
    1 jalapeno pepper finely diced
    sour cream and chives
    Add ground beef in a skillet and break apart
    add all ingredients for beef mix and season to taste
    Layer baking pan with half of the cornbread mix
    then add beef mixture on top of the cornbread mix
    now use the remaining cornbread mix to cover the beef mixture
    Bake cornbread at 350 degrees until cooked
    Once cornbread is cooked now add cheese
    Put back in the oven for about 5 minutes
    Top with sour cream and chives
    enjoy!
