Some Jollofs have dried fish mixed in with the stew and served with proteins like beef/chicken. That may not suit Asian palates as dried fish isn’t usually associated with chicken or beef. Although I love how umami it gets when dried fish is added

Beautiful video. So satisfying and enlightening.
To answer some of your questions, Sonny, Ghana's wide variety of meals is due to the availability of many spices, staples and protein. The major reason is the different cultures as stated. Many different people migrated from many different places and settled in different topographical areas all now called Ghana. With the many options provided by nature, Ghanaians got creative. So you'll see that for one food item, we have so many ways to cook it. We are still redefining cooking methods for our foods because we are a creative people who also perhaps understand modernisation. Also, cooking is held in high esteem here so food well-done is a crown, hence the spate of food sellers. Finally, we're an adaptable bunch who are known to welcome strangers thus some of our cuisine is assimilated.
Thank you for coming to Ghana and i truly hope you enjoyed it!

Love the videos on West African food! such a wide variety and seasoned with incredible spices! We in Southern Africa seem to eat a somewhat mundane diet in comparison. Thank you for sharing African foods with other Africans, and especially thanks for bringing our food to the attention of the world.

We have a handful of African restaurants here (I know a Nigerian, an Ethiopian and a Sudanese place and there are probably others, too), but from my experience with places in Asia I've been to, eating it locally always is a huge difference. We have similar dish in India we call it Tomato rice (Tomato Bhath /Tomato Bath) . The only difference being its purely vegetarian dish hence does not contain animal fat or bouillon cubes. Instead of Tomato paste we use the actual Tomatoes. Its a popular dish in southern India. The curry powder we use is called Sambar powder. African food has so many similarities with how we cook food in India. e.g. Sambusa in Africa is exactly same as Samosa in India. Really enjoyed this culinary trip ❤
