This is not kachapuri though its Adjarian kachapuri big difference, regular kachapuri is more like a stuffed flatbread with mainly cheese but there are other options like potato or bean filling
I'm Georgian and I could not have been happier. But there's one thing: we do not stuff the crust with cheese. It's crispy on the outside and fluffy inside bread and we dip it into cheese. Also it requires just the egg yolk not the whole egg. But omg, actually seeing this on this Chanel is freaking awesome! Love you Chef John

For some reason I would never think that I would see a Georgian dish on this channel, so thank you for this. You got the general idea on point for the first try, for the future I would suggest a few things 1. It's made from really simple cheeses; I don't think you would have a problem doing it from scratch. Mix of "Imeruli" and "Sulguni(is made from Imeruli)" 2. Baked dough tastes better when it's crusty from the outside, difference in textures is yummy. 3. The bottom part should be left for last, you eat the sides first by ripping off bit by bit. 4. I noticed that you had some moisture left on the bottom when you picked up the Khachapuri, the bottom part shouldn't be soggy and should be crunchy as well(use pizza stone and high temperature, small chars are good too) 5. The inside should be a bit wider, with more sauce! :D 6. Lately in Georgia people prefer to take out the dough from underneath the walls right before it's done so you are left with just crunchy sidewalls, thus a lot less stress on the stomach :D 7. And personally I put 1 whole egg and 1 extra yolk(second white makes sauce really runny). 8. No need to cook the whites completely, you're left with white pieces, which don't feel right in the sauce so take the Khachapuri out right before they turn white in colour and they will finish cooking when you mix the sauce(like carbonara) I wish you the best times with Adjarian Khachapuri!!! Definitely consider visiting Georgia, I'm 100% sure you'll enjoy our unique cuisine(most of the dishes are stupidly simple and still strangely really amazing), and everything else that goes with it

Thanks for making a recipe about Caucasian food, hope you will make some Armenian dishes as well. And I still don't get it, why Hachapuri still not popular in US, cause we all know that Americans love bread and cheese.
@@AmandaFromWisconsin, hachapuri uses a special kind of Georgian cheese, that has a distinct flavour and it's called Sulguni. You can't compare Mozzarella to Sulguni, they are complitely different in terms of texture and taste.
Yeah, fact there's at least 10$ of cheese in two small breads kinda tell you why it's not popular in the USA. With those amount of these types of cheese, a bread like this would cost as much as a 12 inches pizza.

Not going to lie, this recipe quarters perfectly (ie cut the dough into 4 equal parts instead of 2). the only thing i would add is that if you cut the dough into quarters, add the egg at the 10-12 minute mark and then continue to cook to 15 mins. this recipe cooks perfectly quartered at 15 mins with out an egg. if you add the egg at 15, you will over cook the bread.

While in Moscow visiting friends, we went to a Georgian restaurant - it was amazing!!! We also found a burger stand serving Georgian style burgers, we still talk about all the Georgian food we had two summers ago! I really want to go to Georgia 🇬🇪 now!
Thanks for making a recipe about Caucasian food, hope you will make some Armenian dishes as well.
And I still don't get it, why Hachapuri still not popular in US, cause we all know that Americans love bread and cheese.
avyfa We like cheese-stuffed crust pizza.
@@AmandaFromWisconsin, hachapuri uses a special kind of Georgian cheese, that has a distinct flavour and it's called Sulguni. You can't compare Mozzarella to Sulguni, they are complitely different in terms of texture and taste.
No offense but the main Armenian dish is barbequed meat skwewers and after a while it gets quite boring
Yeah, fact there's at least 10$ of cheese in two small breads kinda tell you why it's not popular in the USA.
With those amount of these types of cheese, a bread like this would cost as much as a 12 inches pizza.
Plus Italians have a hell of a lot more influence on our food
I never knew cholestrol could look so beautiful
"unless it's really late and you just got back from the club then ones probably fine" lol I was not expecting that 😂
Хачапури отличные! Your khachapury are perfect!
im Georgian and I have been a huge fan of yours, so for this to have come on my timeline made my heart smile. You are the best, I’m glad you represented our country with such a delicious video 💘
How delectable this looks! Your voice is so melodic. The sing song style - the cadences. Very soothing.
wow, that looks like such comfort food. yum.
I love khachapuri thanks for this might try please More georgian food have You tried anything with walnuts pomegranate and other things?
Спас Янков the spinach paste is amazing aswell, or just plain old Khinkali, or the grilled aubergine with walnuts, my mouth is watering with just the thought
My mind was 100% in the gutter when i clicked on this lol
OMG,John
U remind me of my childhood.im 60 lol
Yes born in Athens, Greece
A course lol
My grandma from Turkey used to make them with kaseri, and Kefalotyri cheese only and lots of butter before put the cheese wow
Thanks
The shape of this bread/pizza dough is similar to the traditional Iraqi bread and yes those two corners are so crucial that used for dunkin or arranging the sandwich stuff.
I tried pulling flour out of a dough once. That house will never be the same...
We definitely need more Georgien food like Chakapuli and Khinkali
Satzivi chicken in walnut sauce is the best.
Or the spinach paste with walnuts
I feel like basil, andouille sausage and some slices of cheery tomato's would make this into an awesome appetiser
I showed my husband this vid and he had a bunch of good ideas for different things to add. I love recipes like this you can use it as a base and add something different each time you make it.
That would ruin it
@@gregorythoman8281 Eh, it's kind of like a stuffed crust pizza without the sauce. It wouldn't be authentic anymore but it would still be tasty.
Sometimes that uncontrollable urge to add more things has to be tamed.
I tried authentic khatchapuri in the middle of Georgia. Amazing!!! Loved it. So happy I have an official recipe for it from Chef John. 🥳
Now I seriously have Georgia on my mind. As well as cheese and egg and delish looking bread. Thanks Chef John.
Adjarian style Khachapuri are probably the best one you can have.
lonson nah pass me a regular with either cheese or potato, i never really liked the soggy inside( of the Adjarian), but regular kachapuri, its heavenly
Megrelian is great as well!
This looks way too delicious! :o
I wonder if it would be a bad idea to add some form of herb to the cheese mix, or possibly even some crushed garlic...
Garlic would def be great, but also like pulled panfried tuna
My oven's on fire,
My spoon's like a wheel that's turnin',
My yeast is alive!
Chef John much love from Georgia ♥️ 🇬🇪 huge fan here ♥️ therefore try this: skip the olive oil and let dough rest all night, knead it and make it rise again in the morning, skip the pepper and skip egg whites as well add only the yolk ♥️
Thanks for sharing one of the delicious Georgian dishes recipes. Georgian cuisine is truly rich. It can satisfy all the people with any dietary preference or restriction: keto, paleo, vegan, gluten and lactose intolerance, you can find tasty food for everybody. There are many healthy and ancient recipes too :) Your version of this recipe is very healful for Georgian emigrants too. (Substituting Georgian cheese is really difficult).
OMG !!!! That looks sooooo GOOD !!! I gained five pounds just watching this.....LOL .......... Will have to try this soon. Thanks
Just 5lbs? I'm sure my metabolism was flat lined by just watching this, but OH HELL YEAH I'm gonna make this recipe!

Abol Tabol uncorneredmarket.com/georgian-food/

Drooling uncontrollably. Ingredients list hasn't posted yet on site and I'm off to the store soon for ingredients run. 🤣
ISheolraver go to any Georgian restaurant
@@foxymoxi2231 I found a guy from Tbilisi working at a pizza shop in Albany, NY who made it for me. It was great. I then made it at home. It too was great.
0:20 Too much bread around the outside... round the outside, round the outside
@@piscesmoon420 learn some classic food wishes quotes
@Daver G Thanks but that doesn't explain why the original comment was recieved so poorly by @r turo m. That's why i referred to it as a foodwishes quote
LOL, that's what I thought of too! XD
The only cooking channel that uses the coma perfectly...
Just made this today. It didn't look as good as in the video... BUT MAN DID IT TASTE GOOD!! Awesome recipe 10/10!
I love the way your voice goes high at the end of almost every sentence
0:18 Heresy! The food gods have declared that no amount of cheese is ever enough cheese.
Thank you. Easy to learn, easy to make, cheap and delicious.
I just discovered your channel thanks to delicious fierce potatoes 😊 and I was shocked when I saw this video, I wasn't expecting that! 😍 შეგერგოთ (Shegergot - Enjoy) 🇬🇪 🤗
