- Hi guys! Welcome back. So this one was requested and here it is. This is how I used to make jollof rice in my college days. Now I just cook it all the way through in the pot. I try not to cook with foil anymore so you can use a baking dish instead. When I say washed rice I just mean I rinsed it 2-3 times under cold running water. Give this a shot and comment down below. Jollof Rice Recipe
3.5 cups long grain parboiled rice, rinsed & drained
1 can (14.5oz) whole peeled tomatoes
1 large red bell pepper
1 habanero pepper (to taste)
1 large white or red onion (1/2 blended, 1/2 sliced)
1 1/4 cup meat broth (homemade) - leave out for vegetarian version
3 Tbsps tomato paste
3/4 cup oil
2 tsps curry powder
1 Tbsp season all (or to taste)
1 tsp thyme

Ok, what is season all and what does it look like?
It's a seasoning. I use the brand called Morton but there are others. If you don't have it you can just use salt 😊
