Hey Precious, I love this method. it really saves time. I tried cooking jolof rice in oven before, but I did all in one pot. Needless to say it was not as tasty. As soon as I saw this method, I knew I was cooking rice right away; and bouy, does it taste good! So good. The trick is to start on the stove. You rock, Precious!
I used the foil tray and it worked well.
Thanks a lot. I love your recipes.

Best technique invented in the history of mankind!!!! I could NEVER cook jellof rice in the pot to save my life...... it always turned out burnt and unevenly cooked, made me feel like a failure in the kitchen..... lol! This technique is thebomb.com

    Hello Precious:
I tried this technique this past saturday the Joffof Rice was very good and my husband was impressed.
Plus, it was so easy to achieve without failure (uncooked rice, burnt rice...).
I used brown basmati rice instead of white rice. It took one hour in the oven and an additionnal cup of water. I also added smoked fish, the taste was heaven in the mouth!
Your technique has inspired me to do Jollof Quinoa, I tried it today with white quinoa (pre-soaked for at least 8 hours and drained for at least 2 hours before cooking). I think I will never eat quinoa in another way for a long time before I switch to another recipe.
Thanks again for sharing your creativity with us!
