This is called mutton rosh but original rosh is made from dumba gosht because dumba tail has lot of charbi called chakki l khow because my naanke and daadke both are from Peshawar

Hi, I live in Rawalpindi (Punjab) Pakistan. I like to eat different types of food. I love watching your videos. I also enjoyed watching this video. I want to say here that cooking oil / ghee and tomatoes are not added to make salted meat in Peshawar (Khaibar Pakhtoon Khwah). Meat is cooked in lamb fat. They use only these five ingredients to make salted meat: 1. Lamb fat 2. Lamb meat 3. Salt 4. Ginger 5. Green Chili It is also a street food here in Peshawar. In Peshawar, tomatoes are not much liked in namkeen gosht so it is rarely cooked in tomatoes. They use tomatoes mostly at the request of people from Punjab who are eating it for the first time as the taste of mostly Punjabis would not have developed without tomatoes. I request you that if you ever come to Pakistan, please let me know, I will be glad to see you. And how can I contact you, please let me know. May Allah bless you always.
Nice one. Back in namak mandi it's cooked in sheep/lamb lard. Chillies and crushed peppercorn and garlic water. Mazaa aa jata hai. Citrus is an interesting addition in this.
@@MrRockyMohan Yes it does. Ideally lard/oil cooking with raw meat in it gives a beautiful texture and colour to the meat. Usually done in higher flame in the eateries. Good recipes on your channel sir. Lots of love ❤️

Just one thing the fat must be of around kidney of lamb/ goat or the hind side (tail fat)of donbe i.e sheep (commonly known as chakki)which is very soft and got melted easily it should not be of beef or someother part of lamb

no garlic water in pershwari karhi , thats another form of karahi in which garlic water is added.
