- Banana bread is the most searched for recipe on the internet. Everyone has their own recipe and in this video I am sharing mine. The banana bread I cooked for The Queen.
This delicious recipe stays moist in the fridge due to the dried fruit and the crunchy nuts take it to the next level. I've been making this recipe for over 30 years now and honestly it's still my favorite... for breakfast, brunch and of course afternoon tea... slathered in salted butter of course!

Heres the recipe...
(Makes 1 loaf)
8oz self rising flour
¼ tsp salt
4 oz unsalted butter
6 oz sugar
4 oz golden raisins
1 oz chopped walnuts
2 oz cherries
1 tsp vanilla bean paste
2 eggs
1lb ripe bananas
Grease and line a loaf tin with parchment.
Rub the butter into the flour and salt, Add the sugar, walnuts, raisins and cherries. Make a well, crack the eggs into the center.
Mash the bananas, add to the eggs and vanilla paste and mix well. Add to the flour mix and stir until combined.

Best trick I use is to add a very ripe mashed pear. It doesn't taste much like pear when it's done, but it intensifies the banana taste and makes it really moist.
I remember my grandad telling me a story of the first time he saw bananas sold in the UK.
They were very rare when he was young and weren't nearly as readily available as they are now. As a result, many people never saw or tasted one. Because of this, they didn't know how to peel it so he recalled watching lots of people biting into bananas, skin and all!

I have made this about 4 times now and substituted apricots for the raisins and dried cranberries for the cherries only because I was out of those items. This is simple and delicious and everyone I give it to wants more and more! Thanks Darrin!

Mine just came out the oven and it is the best! It’s the third time I’ve made it - it’s that good!
Two suggestions and tweaks I’ve discovered while experimenting:
-100g instead of 170g sugar. I found that the dried fruit and overripe bananas add lots of sweetness and prefer for them to not be overpowered by the sugar
-100g Frozen whole cherries instead of dried cherries - the moisture added and flavor is spectacular. It was slightly on the dry side without the moisture of the frozen cherries

Such an interesting banana bread with the extra fruits! My old standby is my grandmother's 1960 Ladies Home Journal Cookbook recipe. So easy and do it sometimes in a loaf, sometimes in muffins, but so good :)

I love some Banana bread. This one is very different from the kind my southern mother makes but still looks very good. She adds more kinds of nuts and less of the dried fruit. It's really hard to mess up Banana Bread. Another fun one I like is Pumpkin Bread this time of year. With toasted pumpkin seeds on top. It reminds me of Pumpkin Pie only with the texture of Banana bread.
Walnuts are an excellent addition, and pecans.

I'm (sort of) trying Queen Elizabeth R's Fish and Chips, with oven frying the chips, too:). I've used the Joy of Cooking banana bread recipe for years. Your hand-mixing of the butter and use of golden raisins and dried cherries looks quite luscious ~ Wisconsin-appropriate, which is where I live (cherries are prolific in Door County; lots of ctanberries in western WI, which might also be tasty!). Thank you so much for sharing your unique and fascinating stories and expertise!

i agree with you about the black bananas being the best for banana bread !! When i have extra, i freeze them and they keep on ripping there, i keep all the juice when they thaw..... i love adding raisins, nuts and even coconut in it at times !! i made it for years with butter ( my fountain pen scribed recipe was all blotched) until i ate an even better slice than mine and switched to oil to this day ( and i still have my turquoise ink recipe in my book ;-) ) yum yummy !! I'm too lazy and thrifty for the parchment paper, yet it's a good idea !! merci !! oh, some like choc chips in it too~

OMGoodness!!!!! In most banana recipes, especially here in the US, it is wet combined into the dry then baked. You did something completely different here. It was almost as if you were making biscuits/scones???? Very unique for us in america. I have to tell you that I cannot wait to create this banana bread. it looks absolutely delicious!!!!!

😉 generally, raisins aren’t in our style of banana bread but I think it sounds good.
I think the most common American addition to it are walnuts or pecans.
One of the best tips I’ve ever come across is to use 4-5 bananas and to cut down on the moisture, you simmer the bananas once mashed till they evaporate about 1/2 the liquid- makes a very rich banana flavour as well as I brown the butter before adding.

Fresh, home baked banana bread smells like heaven & tastes Even better!
secondary comment: I live in Montreal. We have a renowned hotel "The Queen Elizabeth". They make a banana bread that is pretty famous, the chef that put it on the menu, had cooked for the royal family while they were touring Canada and he served this banana bread. (it's all in a book about the history of the Queen Elizabeth Hotels cafe, The Beaver Club) the recipe sounds ridiculous, but is the best banana bread I have ever had...I'll post it here (take a look at the amount of baking soda, haha, but it works like a charm), my Father-in-Law taught me a trick with it I use half cup of creme fraiche and half cup of buttermilk, makes the bread taste so much better:
1 pound (about 4) very ripe bananas
2 1/4 cups sugar
7 teaspoons baking soda (I am not kidding 7tsp. is correct!!!)
1/4 teaspoon salt
4 eggs
3 1/4 cups flour
1 cup buttermilk (you can sour normal milk with either vinegar or lemon juice)
1/2 cup vegetable oil
Adding too much baking soda to a cake will make it bitter. Are you sure it's 3.5 tbsp?

Thanks for sharing this recipe. It turned out moist, soft and delicious. Adding cherries was a good idea. I swapped the walnuts with pecan nuts as I had run out of walnuts, but it still tasted great.
My mom has this cookbook and has been making everything from it and bringing it to me and my husband. I’ve been craving this since I had it last week. I need to make my own and stash it in the fridge.
