Just like you showed, the trick is to have as less binding substance like flour as possible. The ratio of the veggies compared to that of the flour should always be nearly triple for the pakora to be perfectly crispy.

Squeezing the veggie mix lightly will also cause it to release some moisture. Finally, just before you put it in the hot oil, you can sprinkle a little water to make the pakora. It should be barely enough to hold it together when the pakora hits the hot oil. It’s a different technique than batter frying such as tempura.

Well I totally screwed them up. I tried to use my small fryer and they just clumped together. I waited about 8 minutes or so and then I tried them - AWESOME! I will probably screw them up again next time; but they were crunchy and satisfying. Thanks for sharing the recipe!

I will definitely be making these onions..this recipe also reminds me of an appetizer a US restaurant served called an “Onion Basket.” The onions were sliced super thinly and fried in a large mass, basket shape, served with dipping sauces! 😋
@@funkfunkable No. That is still around, it’s at The Outback Steakhouse restaurants. I think the restaurant was T.G.I.F….it’s been quite a few years ago. The onions were sliced into super thin rings, battered in a spicy light beer batter then fried in a deep fryer. They were so thin they stuck together in a “nest” when frying and they served them in a basket with a ranch or horseradish dip. Yummy!

Idk but I read a tip to use seltzer in pancake batter to make them fluffier....haven't tried it....yet.😊🥞🧄
