I put a little bit of chocolate in my mushroom soup. I know it sounds odd but it's so good...! Chocolate milk instead of cream also works really great!
Felicia Belinda It doesn't taste chocolaty, it just adds a nice richness to it. I had it at a chocolate festival years ago and I was shocked how tasty it was!

I wanted to say thank you. I followed your instructions and it came out amazing ! I highly recommend blending some of the mushroom to make it creamy as you suggested.
I use this recipe, with one addition....nutmeg, a few grates only. Since I made this for my 3 granddaughters, my daughter now has to make it for them once a week, it is that good.
I like that you used a larger variety of mushrooms than most recipes I've read and viewed. Also like how you turned half your soup into your creamy base before adding the heavy cream. In my opinion it almost resembles a bisque in texture and thickness, which is pretty awesome. Just putting this out there, love your video recipes/cook alongs!
I made this recipe last year to put in my green bean casserole for Thanksgiving, which has been a favorite of the whole family for years, Instead of the Campbell's cream of mushroom soup that I normally use. and everyone agreed it was the best green bean casserole I had ever made.
I do it the same way, but I caramelize the mushrooms more and I deglaze with sherry before adding the stock. It make the flavor just a bit richer. I try to use a variety of mushrooms but even if I can't find many fresh kinds I never skip the dried porcinis! Those are vital for that and for mushroom risotto. I'm so glad you use them too! I love this recipe ; I do add a few things and put them in the blender so they are not loose in the soup : red bell, Anaheim pepper, garlic and onion. And I use chicken and beef stock with the various mushrooms. Portobello is a must have. My husband loves loves loves it... so warm ( taste and temp) Love you Laura !! You are a doll :)

I like to use Portobello over cremini mushrooms and cauliflower. The cauliflower gives the soup a chestnut flavor and I can puree that and keep my Bella mushrooms aside for texture. Also I like 3/4 to 1/4 cream over heavy. Thanks for the recipes, they work.

I have watched her for a few years now and have heard her speak of you, I have put off checking you out though because I knew how addicting your channel would be!! :-) I see lots of food related videos in my future. I might end up making the soup vegan (my friend is allergic to milk protein, the poor soul), but I doubt that'll be much of a sacrifice. Looks delicious! so i just made this, with some slight variations (i used beef broth, garlic, dried herbs) and it came out AMAZING!!!! one thing i didn't use was the sherry/wine/booze but i totally wish i did. next time i'm sooo adding that because i know how well the flavors blend. also, i never realized how well thyme goes with mushrooms along with rosemary. i used ONLY cremini mushrooms, which is great, but shittakes and other "exotic" varieties would make this even better. luv ya laura!
Instead of heavy cream, i put in a cup of short cut pasta (eg. fusili, farfale, that wheel pasta), to thicken my soup. And i personally prefer the soup without blending it, the textures of different mushrooms are just divine!
