    It’s so refreshing seeing someone talking openly about the anxiety of travelling: I often feel very jittery right before leaving my comfort zone and a few days after the departure, which makes me feel so ungrateful and like such a scaredy cat. Thank you for speaking about it, it made me feel less alone 💌✨ (also, from a literature graduate to another, keep the book reviews coming!)

    the first few weeks are the worst, but make the most out of your exchange. it will go by sooo fast and you'll keep the memories you're cultivating right now for a lifetime. i sit and long for those times all the time.

    The one store you stopped by, Motel à Mio, is a German brand making Portuguese porcelain (all made in Portugal) but is inspired by Danish design. It’s such a great mix of different parts of Europe !

    Hi Eva! I've been on Erasmus for one semester from september 2022 and just got back now to my hometown and I can assure you that you are not alone and your feelings are so natural right now but there will be better time and very good moments to enjoy, just trust me☺💖

    You have no idea how blessed and lucky you are! Your travel videos bring me so much comfort as due to circumstances I could never have amazing opportunities like living abroad which would be a dream. Love all your videos but I am so excited for more videos in Scandinavia! It’s my dream destination in the world. You should take a trip to Sweden and Norway that would be so cool! As an American I almost never met or see other Americans or Canadians who choose Scandinavia to travel or live, it’s always France or Italy so this is so exciting! Can’t wait for more videos from your Scandinavian adventures ❤️

    I recommend this place called Reffen,is where they have lots of street food and they have so many different choices ! I also recommend renting bikes because it's so nice and calming biking around Copenhagen!

    i can’t wait for you read the perks of being a wallflower. it’s my all time favorite book, it’s the book that got me into reading. despite its “simple” writing i find that it’s a mask for the real depth that lays behind the story. i love it and i hope you do to 💗

    I have translated the recipe I got from my mother and added steps and hints.
    Drømmekage fra Brovst:
    (Dreamcake from Brovst)
    Ingredients:
    For a baking tray about 42cm x 42cm (~ 16.5 x 16.5 inches).
    If your baking tray is slightly smaller or bigger it just means your cake will be slightly thinner or thicker and you might want to adjust your baking time to fit that - experiment with it.
    Note: best to measure out every ingredient for both the sponge and topping first but making sure to keep them separate to not accidentally mixing them together. Also, a good idea to read the whole recipe and make sure all the needed utensils are at hand and ready to be used. The same pot for melting ingredients, can be used for both the sponge and the topping.
    For easy cleaning you can line your baking tray with baking paper, otherwise you will need extra butter to grease your baking tray, before pouring in the mixture for the sponge.
    Sponge:
    6 Eggs (experiment to figure out which size eggs suits you best)
    600 grams Sugar
    500 grams Wheat flour
    6 teaspoons Baking powder
    2 teaspoons Vanilla sugar
    4 decilitres Milk (3.5% fat or as close as you can get)
    100 grams Butter
    Extra Butter (if you decide to grease your baking tray)
    Topping:
    250 grams Butter
    200 grams Coconut flour (this is supposed to be quite course, so not finely grounded like regular flour)
    500 grams Muscovado sugar
    1 decilitre Milk (3.5% fat or as close as you can get)
    Step 1:
    Either line your baking tray with baking paper or grease it with butter.
    For the sponge part of the cake:
    Use large bowl that can hold all the ingredients for the sponge.
    Set oven to preheat to 200 C (392 F - you might use 400 F)
    Step 2: (Sponge)
    Eggs (without the eggshells)
    Sugar
    Whip these 2 ingredients together at least until the mixture gets foamy.
    Step 3: (Sponge)
    Wheat flour
    Baking powder
    Vanilla sugar
    Fold the 3 above ingredients carefully into the egg and sugar mixture from above.
    The reason for folding it carefully is to retain the air that was whipped into the mixture.
    Step 4: (Sponge)
    Milk (just the amount for the sponge)
    Butter (just the amount for the sponge)
    These 2 ingredients are first slowly melted together in a pot (don't get it boiling - just melted) and then also folded into the above mixture.
    Step 5: (Sponge)
    The mixture is poured into a baking tray and the baking tray (with the mixture in it) is put as close as it can to the middle part of the oven and baked for about 20 minutes (experiment with timing)
    For the topping part of the cake:
    Do this quite soon after step 5, since it is best for the topping to cool down a bit before spreading it on the sponge.
    Step 6: (Topping)
    Butter
    Muscovado sugar
    Milk
    These 3 ingredients are melted together in a pot.
    Step 7: (Topping)
    Coconut flour
    This 1 ingredient is added to the pot and mixed in well.
    Let it sit and cool a bit while the sponge finish baking.
    Step 8: (Sponge)
    Take the baking tray out of the oven after the 20 minutes (or what time you have found to be best)
    Set the oven to 220 C (428 F)
    Step 9: (Sponge & Topping)
    Spread the topping on the sponge and prepare to get it back in the oven.
    When ready put it back in the oven for about 5 minutes.
    Step 10: (Sponge & Topping)
    Take the baking tray out of the oven after the 5 minutes and fight the urge not to cut and eat the cake right then and there - remember it is very hot right out of the oven.

    Copenhagen is the best city ever. I also did my exchange there last semster and it was one of the best periods of my life. I know for sure that I want to go back to this city to work/live there long term. Enjoy!!

    hello Eva! I just moved to The Netherlands from sunny Portugal, here is a list of things that might help! thermal underwear helps me keep the warmth without feeling like the Michelin man, a heating pad could help the cold-room situation and stopping every once in a while during a day out of running errands for warm coffees helps so much! hope this helps

    u should definetly try visiting the amusement park tivoli gardens, when it opens up the on 31st of march. i live in copenhagen myself and it is one of the nicest and hyggeligste places in the city

    It is strange to see this city through your eyes. I've spent quite a lot of time there for work and this brings a new perspective. Love it! I am happy you are in such a safe, lovely and beautiful city. I hope you get to enjoy it to full extent. The spring will be beautiful. Danish summers are SO lovely as well. I REALLY hope you will visit the most beautiful beaches there during the summer. Please believe me: a study exchange will go SO SO SO fast! Denmark is also a great hub to visit other places. As Denmark is quite expensive a lot of the locals go shopping across the border to northern Germany. I love that you can take a train to many parts of Europe from there!!! Also had no idea Copenhagen has a good thrifting scene. Thanks for the tip! =)

    omg I'm finishing up the last few minutes of this video right now and you mentioned TPOBAW so I had to come back and comment. Perks is my favorite book of all time. I read it in 9th grade (I'm in 12th now), and it changed my life tremendously. Even though I have read so many books since then, nothing will ever top Perks for me. It is just utter perfection. I hope you enjoy it! Also: my 2nd fav book is Daisy Jones and The Six which is also featured in this video HAHA.

I can relate a 100% :) Settling into a new place is always hard at first, but it soon pays off. I hope, you feel a bit more like a local already! Also, The Secret History by Donna Tartt is one of my favorite books. It is soooo good. Absolutely recommend it!
