For the sugar syrup:
300 grams water
300 grams sugar
4 tablespoons of cherry brandy (or more to taste)
for the squeeze bottle (Yes, I bought this from Yolanda Gamps website from How To Cake It haha):
howtocakeit.com/products/new-y...
For the sponge cake (in this particular video I used a special sponge cake mix called by Allied Mills (bakery grade flour). If you would rather a scratch recipe, I have one here:
www.youtube.com/watch?v=tDhEe...
For the custards, I have this awesome scratch recipe here as well:
www.youtube.com/watch?v=Fcgbk...
In these video tutorials, I normally use Bakels Premixes to save on time.
(Bakels is a bakery grade cake premix. Another great one is Allied Mills)
If you prefer to bake from scratch, I do have a range of awesome cake recipes here which convert to cupcake recipes very nicely too.

Thanks guys for tuning in! In America this video has gone up on Saturday, however here in Australia I am technically a day late. I apologise for the discrepancy, I seem to be making it late on Saturdays as I am usually decorating orders or doing cake deliveries. It has been getting pretty busy here on this end! Thank you for your patience and understanding.
See you all again in the next video :D
Love,
Rosie

Love it!!! It's beautiful, will try to replicate for sure!
It is refreshing to see something a little different from your recent cakes. I have been debating about leaving a comment like this as I want to see your channel continue to grow and thrive and no matter how polite I make this it is going to be hard to read. I see you mentioned in the description box that you are getting busy with orders and that is terrific. On the downside, I think your tutorials are suffering as your cakes are beginning to look a lot of like with the same few techniques being used in rotation. Even the filming has mostly been focused on adding buttercream to the cake-board and icing the cake, something we see in every single video. It isn't necessary to show that in every video for every layer. Today it was nice to see you add some new options- the alcohol-infused sugar syrup and the two custards provide very nice options to all-buttercream fillings. None of this means your cake's aren't gorgeous cakes-they are- but to keep your content interesting you need to push yourself. I see someone below commented that things are looking a little sloppy lately and even this cake I see a couple of things I think are a little sloppy- the dress hem is all over the place and if you used a smaller-and better made- paintbrush your gold paint would look so much better on the trim. As is it is uneven and patchy with areas that remain unpainted fondant. You are talented and clearly passionate and I know that putting out a video every week is a lot of hard work . Between designing, actually making the cake, filming the entire thing, and editing several hours of footage down to 5 or 6 minutes takes a lot of time and effort. You know I am very supportive of you and have been and I only want you to succeed and finding a balance between this and your other obligations will take time.
+Danee Kaplan thank you Danee for your valuable feedback :) I was actually thinking of cutting down to one video a week, I am starting to burn out juggling work and everything else. It may be one video less a week but it would mean I can do it carefully and I can think more creatively and with clarity. I'll see how I go. Thanks again for taking the time to share your feedback xxxx I really appreciate it
+Rosie's Dessert Spot I think one video a week is awesome because it means your business is taking off. I love your toppers- they are very creative and different from what I have seen on the market. Sadly I am out of the party business with my family because my 10 yo HATES parties so much I stopped having them. About killed this theme-that-party-the-max woman but he's more important than my need to make a great cake and favor box. I wouldn't mind one video a week-I understand and I think it is a great sign that you are picking up business which is all good in my book.
Looks gorgeous Rosie!
Love the step by step. Thanks for sharing, my daughter would love if I made this!
Girl you don't have to apologize! Thank you for making time for your UA-cam family...lovely tutorial as always😘

+Beth Gates haha glad you like it! thanks for your comment Beth ;D xx
So lovely!
i like the idea of passing steam over the fondant to get it nice and shiny instead of having to paint over it or something.

thank you so much +Adrie Anne :D xx
love your ideas!!
+Sanjuana Jauregui thank you!
How cute! I always wondered how those doll cakes were made, of you put an actual doll in the cake or a just the plastic torso on the top. Great tutorial and the final product was beautiful!
+Analicia Dubrisingh thank youo so much Analicia
+Analicia Dubrisingh I used an actual Barbie doll in the doll cakes I've made, but there's actual "cake dolls" that are sold, with a body and a spike instead of legs, to insert the doll into the cake. But you can use any type of slim doll, as long as the part you insert into the cake is wrapped with plastic wrap, like Rosie did.
wow beautiful cake xx

Please put a link on the cake pan that you used
+charizze mae inot I was wondering that too. I made a doll cake years ago using Pampered Chef's 8-cup glass mixing bowl, which is oven-proof. It made a great "dress" but was a tad too short for the Barbie I used. I made my cake entirely out of buttercream, so I just made ruffles at the top of the "skirt" to cover the extra area of doll that didn't fit inside the cake, kind of like the ruffles Rosie used at the waist.
charizze mae inot Sachs the

Hi Rosie! where did you get the cake pan? I hate cuting all the little pieces from the circular cake... please?
Hi +Chanita06, if you are in Australia, Spotlight (hobby store) sells them, or most cake deorating suppliers :) but hobby stores might be your first go to if they're easier to come by
May I ask, what the spray thing that you use at the end of the video that made the fondant shiny?
Its a steamer=)
Any idea for cake pops
