James I just love this authentic Spanish paella recipe. Definitely very different from what everybody in the United States things paella should be. You always have the best chef tips so I always love to tune in and watch. Love the use of chicken and rabbit in this paella and great tip on using the specific rice and that important 3 to 1 ratio. I like how are you explain the difference between paella and risotto that was very important how you’re not continually stirring the paella. Fantastic recipe

Today my wife wanted paella for her birthday. Started on the stove and as the meat was getting finished, Idalia cut our power. So I finished it off on the grill (was using cast iron). Must say the result was delicious, thank you for a very easy to follow recipe which ended up being a complete hit.

My ex is half Spanish....from Valencia region. Her, and her mother's/family's recipe includes snails and a special Spanish colorante that comes in sachets. The colorante achieves the colour without too much saffron taste. And i advise covering the floor of the kitchen near the stove with newspapers.
Hi James, we just returned from an amazing 2 weeks in Barcelona! I brought back a paella (pan), some bomba rice, and some saffron. Yesterday I made a paella for 2 based on watching your videos. I broke several “rules” but the result was better than I expected, and my wife complimented me. I even managed to get a soccarat without burning! I found the process tricky in that there’s a lot of judgement and vigilance required, but that’s not hard if you do a lot of cooking like I do. Thanks for your guidance!

i dont see chicken paella often, so this was a good one for me. this looks super easy and appreciate all your tips, especially interesting that you can grate tomatoes with the cheese grater wonder why i never thought of it
With a good grater its easier! haha the seafood paella is the most common here for the tourist but it's common to eat paella on Sundays, as we do in the UK with Sunday roast!

Made a cut down version of this the other night and enjoyed it! Deviations were: no rabbit, so doubled up on chicken thighs, no beans (didn't have them handy and they're mostly decorative right?), tinned tomatoes (nominal 227g can, blitzed). Cooked as per video and finished on a low gas burner with a heat diffuser and a lid. I think it ended up a bit heavy on the tomato, so I'd dial that back in the future, but otherwise all good. Great recipe and glad I tried it! I found few parts unclear once I actually started making it. Do you add all the chicken stock at once or do you add it a ladleful at a time as the rice absorbs it? Do you keep the stove on high heat once the stock is added or do you turn it down? Approximately how long should the paella be on the stovetop before transferring it? My stock was always bubbling and I had trouble determining the "doneness" of the rice from the video. Any specific oven temperature? I did a standard 350 F/175 C which seemed to be okay but I wasn't sure if it should be higher. Looking forward to trying again soon! Seems like it will take a few more attempts until I get it perfect
Thank you! I would like to remake it as I made this video when I was in the process of moving. Paella is one of those dishes that you have to make several times before you start getting things right. It's not easy to get a 10 out of out 10 with it. I add about three times the amount of stock after I add the rice but I always count how many ladles I put. The measurements are not always precise. you can also finish it on the stove top but you don't have a precise amount of time so you have to check the rice continuously. The temperature depends on how big your burner is, if it's more or less the size of the pan I would say put it on medium heat. in this video I was using an induction so everything was different. I prefer gas. The moment the rice starts absorbing the stock I add a little more and then I place it in the oven. After you have made it a few times you will learn when the rice starts absorbing the stock, its about 3 to 5 minutes. The temperature will have to be adjusted depending on the oven. the oven I was using I had to put it on maximum so 220c and it was still not at temp. It was a 20 year old oven :/ I would say 200c for 12 mins and rotate after 6 minutes and check. I hope this helps! like I said, I'd like to redo the video I have a much better setup now and I think I could do better explaining everything.

Nunca imaginé que llegaría el día en el que vería a un chef no español usando especias del Mercadona XD Dejando eso aparte, si vas a hacer paella valenciana usa los métodos e ingredientes de la paella valenciana (existe una receta con denominación de origen que también recoge variantes aceptadas) Si no vas a seguir la receta al pie de la letra llámalo solo paella porque de valenciana no tendría nada, sería solo arroz con cosas. A mí me da más igual pero si ve esto algún purista se te echa al cuello jajaja. Y mejor no hablamos del golpe al horno. Im semi happy xD Tastes good but rice is a bit to wet and the socarrat is a bit too ... "Epicurious". But it magically didn't ruin the taste and I'm happy for my first try without the correct dish and on a induction stove. And I already learned a thing or two from my mistakes

Hey Margaret! yes, it is! I'm glad to hear that! we normally use the oven to finish paellas in the kitchen and you can still get that crispy base if you are using the right paella pan which I am not, my base is for induction, not just for gas. :)
I’m from the Philippines and we have our own version of Valenciana. Years ago we were colonize by Spain so sone of our Dishes is a bit similar to Spain’s. In the Philippines Bomba Rice not widely available so we use sticky rice, saffron as well we substitute it with annatto
I made this last night, it turned out really good. The one paella criticism I have is the meats always turn out overcooked. I suspect browning but not fully cooking the chicken and rabbit (I didn't use rabbit) then removing the chicken and reintroducing at some point, maybe just prior to the oven might make the chicken more succulent. Still excellent recipe, very easy too.
I never cooked this recipe before as u said ur recipe is much more simple than other recipe I like u explained about paella I always thought it’s made from chicken and shrimps One thing I don’t have is that kind of rice and rabbit meat 😔

Sounds good! just try adding less tomato next time and yes the beans don't add much other then some color and texture

The temperature will have to be adjusted depending on the oven. the oven I was using I had to put it on maximum so 220c and it was still not at temp. It was a 20 year old oven :/ I would say 200c for 12 mins and rotate after 6 minutes and check. I hope this helps! like I said, I'd like to redo the video I have a much better setup now and I think I could do better explaining everything.

this is simple and easy to cook, I guess it's better than our Paella here in the Philippines, most or all of our traditional paella here is with seafoods ,making one is time consuming and expensive , thanks Chef

Dejando eso aparte, si vas a hacer paella valenciana usa los métodos e ingredientes de la paella valenciana (existe una receta con denominación de origen que también recoge variantes aceptadas)
Si no vas a seguir la receta al pie de la letra llámalo solo paella porque de valenciana no tendría nada, sería solo arroz con cosas. A mí me da más igual pero si ve esto algún purista se te echa al cuello jajaja. Y mejor no hablamos del golpe al horno.
Sobre los puristas, mira el último anuncio de arroz Dacsa, así te harían por internet si te vieran.

Im semi happy xD Tastes good but rice is a bit to wet and the socarrat is a bit too ... "Epicurious". But it magically didn't ruin the taste and I'm happy for my first try without the correct dish and on a induction stove. And I already learned a thing or two from my mistakes

Hey Margaret! yes, it is! I'm glad to hear that! we normally use the oven to finish paellas in the kitchen and you can still get that crispy base if you are using the right paella pan which I am not, my base is for induction, not just for gas. :)

Looks great, I live in the uk and rabbit is tough to find - even in butchers.
I’m from the Philippines and we have our own version of Valenciana. Years ago we were colonize by Spain so sone of our Dishes is a bit similar to Spain’s.
In the Philippines Bomba Rice not widely available so we use sticky rice, saffron as well we substitute it with annatto

I made this last night, it turned out really good. The one paella criticism I have is the meats always turn out overcooked. I suspect browning but not fully cooking the chicken and rabbit (I didn't use rabbit) then removing the chicken and reintroducing at some point, maybe just prior to the oven might make the chicken more succulent. Still excellent recipe, very easy too.
yes you can over cook it and that's why it is butter to use leg meat, rabbit doesn't have a lot of meat on it but you can easily overcooked it

200c with no fan but every oven is different
Know looking at it, does reminds me a similar to claypot rice a southern Chinese and Hong Kong dish.
I never cooked this recipe before as u said ur recipe is much more simple than other recipe I like u explained about paella I always thought it’s made from chicken and shrimps
One thing I don’t have is that kind of rice and rabbit meat 😔
