I'm Sorry, i'm clearly no expert in this particular field, but grinding the blade, AFTER the heat treatment don't your ruin said heat treatment? Plus, after the treatment, shouldn't the steel be less "grindable" since it gets more tough and hard (please, pardon me, I'm not an English speaker, so i don't know if those specific terms are correct)?
When you dunk the blade in water once in a while during grinding, you don’t ruin the heat treatment. If you grind off too much before the quench and heat treatment there is a big risk of warping. Yes grinding is not as easy after the blade is hardened but it is less risky if you are careful not to overheat the blade grinding.
