    wonder how long should 1 side be cooking, when I am using a size like yours?

      Very high heat, and a sear on one side should just be for a minute or two. Just until you give a new good browning.

    Delicious!What's the maximum marinading time and how long can the onions be kept (drained) in the fridge?

      You can keep it marinated until it goes bad. The recipe is constructed so it can be held indefinitely without the flavour ever becoming too powerful.
