My mum used to make a wonderful dish she called Potato Lemon cheesecake....it consisted of a layer of shortcrust pastry in a flan tin, spread with jam then a mixture of mashed potatoes, sugar , eggs and lemon zest and juice was spread on top before baking...and then chilled overnight in the fridge.....it was very special .I have never come across anyone else who knew this recipe....I recommend it highly.

I bought a Kenwood chef 40yrs ago and the recipe book as potato pastry in it.I have always used it for cheese flans and its great. Without more ado the mash has no milk or butter in it and the creamed mash which you can cream in a machine or hand has to be cold before mixing into a dough.Great show mate

When you cut the first slice and carefully went down the side without crumbling the potato pastry, I heard my grandmother say, "Oh ah, they don't let 'em on till they've reared 'em." You really should have a pie shop. I reckon you'd sell out.

With the number of times Rik mentioned mashed potato I reckon he was rewarded with a container of Smash for every time he said mashed potato ... lol This certainly was a different way of making pastry, something I had never heard of. I eat potatoes nearly every day. I've seen all sorts of recipes that uses potatoes eg bread & flatbreads (awa as a base for fillings to go inside) & mash potato is a great was to thicken sauces, stews, curries & soups instead of using flour. Now I can put potato in pastry too - excellent. Thank you for a very unusual take on a classic recipe. And thank you South America for the gift of the potato.

So happy to find this channel! It's giving me lots of ideas for my weekly veg box - I love eating seasonally and locally but it can be a challenge sometimes. Traditional recipes with potatoes, cabbage, turnip, beetroot, leeks etc are a big help
How do you make the lovely curry sauce (not curry paste) that you buy with your chips at the local take-away? I asked how it was made and was told they use about half a dozen spicy ingredients, but also including butter. Chips just aren’t the same without curry sauce!
We don't cook with potatoe pastry enough in the uk, we should as it nutritionally contributes to one of the five main nutrients.... carbohydrate, essential for energy!
I'm definitely going to be searching for some decent potatoes to try this! The town I live in, in Costa Rica has old produce, especially the potatoes and onions (and they still get away with charging 13% tax on it all). Love your recipes!!
The potato shell held perfectly, nice and stiff, but the apples fell out, so gotta figure what is it that keeps a regular pie from falling out like that. Maybe you should have let it sit and cool longer ?? Or is there an ingredient that should go into the apples to make them hold together ?? But no matter if they slide out, the pie seems delicious. I have no complaints .
I wonder if this was a way of using up left over mashed potato, or because they grew mostly potatoes in Ireland… I have never made this type of pastry and it seems a bit weird to have it with a sweet filling. Great way to do the apples as well giving some solid apple texture. Very interesting all round Rik! 😊
Rik. when I make a german potato bread if the spuds are too wet I chuck in some instant mash to soak up the excess. Always have some in the cupboard for thickening soups and sauces. Got a bit more substance than cornflour.

I know I'm very late on this so don't know if you will see it. Potato Pastry was also a big war time recipe here in the states, along with Potato Bread and Potato Candy. I've seen it used to make Pasties (hand pies here), sweet or savory, but was also wondering if it is ever used to make a Galette, sweet or savory? Or is it too soft? Shirley in NH
