Anyone got the "caramelized egg yolk " recipe? I'm really curious about this.
Was thinking the same thing. I'm assuming you have to solidify then caramelize then puree back in with cream or water maybe to make the liquid? Can't imagine the flavour.
mix sugar with egg yolks and sous vide it for 24 hours at 84 degrees celsisus. there you go
