Little tip for your rice dinner: Use salsa instead of tomatoes, onions and bell pepper. All those things are already in there. It's non-perishable, delicious and easy. I do this when making chili or a spanish style rice like you're showing. :) Happy adventures!

For breakfast, you can stir in one egg in the oatmeal to save using an extra pan. The oatmeal will be more silky in texture.
Good camping meal video. Do more like this. Even for us that just like to go to the park and make a meal while traveling, these are great ideas.
With the leftover rice and sausage meal (I had frozen it after our trip), took it out added corn and stuffed some peppers topped with cheese last night on grill, yum!

I like how you approach the better quality food vs. cheaper food. That was tactfully covered.
One thing I never see anyone really mention in their backpacking or camping meals is dehydrated hash brown potatoes.
Not that expensive when you figure at the recommended serving sizes a little less than 50 cants a serving, packs down well and only takes a few minutes to soak and reconstitute and can make a nice addition for many breakfast or even dinner dishes to complete the meal.
I am always one that looks for things that store well, can be broken down into usable portion sizes with the remaining unused portions really still being able to maintain a good shelf life.
As a single person that really does not eat a lot to begin with I even like these types of foods at home.
If I buy a gag of say frozen hashbrown potatoes usually I will end up throwing a partial bag away as it will develop freezer burn before I will want hashbrowns often enough to consume the entire bag.
Hence the dehydrated option fits well even into my everyday life but is also good for camping, backpacking or in the event the power goes out and no refrigeration.
And everyone knows the Waffle House is known for their hashbrowns but did you also know that their hashbrowns are also dehydrated and reconstituted as well?
Just a tidbit as one can know that being dehydrated does not mean bad quality or taste!

Great video! The one pot jambalaya is a go to for me - not even while camping, just as a regular home cooked dinner! Love it!
This is such a good video! We are vegan, so I could imagine adjusting this for our needs. Breakfast - Double the oatmeal packet and add nuts, Lunch - chickpeas salad with bread and veggies, Dinner - Jambalaya with Red Kidney Beans. Snack - A S'mores Banana with vegan mini chocolate chips and graham cracker crumbles. If there is extra room in the budget, adding an apple would be nice. I don't know the cost, but it would be inexpensive.

I’m one of those people that likes to meal prep at home. The less I have to do at camp the better and I do like the one pot meals. The less dishes and clean up the better. But I also like the budget friendly meals. This was an awesome video thanks, Amanda.
I can’t eat it because I need low carb, but it would be perfect for people without dietary restrictions, and so easy. I always look for easy meals when I camp. 😊
Costco sells a bag of Krusteaz Buttermilk Pancake mix which is “just add water”. Couldn’t be any easier to mix up a batch and cook it on my camp stove with a griddle pan. That’s one of my go-to camp breakfasts.
We buy the large bag of Krusteaz at Walmart too. Throw in fresh blueberries and perfection!

I live in a van also, I have 4 things for cooking, a Instant Pot 3 qt, a small pot with lid.A good propane burner. And a WOK ! I make many 1 WOK meals with rice, pasta etc, meat and veggies. Cheap and delicious, on YT are so many recipe for chinees cooking... Nothing out of a bag or pot, all fresh.
The Italian sausage for jambalaya, when Andouille was right beside it?!? (But seriously - these are all amazing ideas, thank you from someone perpetually on a budget!)
Maybe they cant handle thd heat i know some times andouille can be too hot for me at least and im used to putting sambal on everything
Flavored tuna helps to add flavor. I like the roasted garlic from Starkist. It's in a can

One of my very favorite camping meals is just a simple box of Zaterain's beans and rice and some smoked sausage. Something I like to do if I'm camping on my own is look at the weight on the box, then use my food scale to divide the package in half so I cook just half of it and don't waste. I bring just enough smoked sausage for me. Add some Louisiana hot sauce and you've got a hot and satisfying campfire meal.
New to the channel! This was a great video!! I have 2 kids that we are taking on a week long camping trip into the superior national forest in a week and I can’t wait to try these out!!

I'd like to try that dish with the Italian sausage, but with a good chorizo like you find at Publix. It actually cooks up like sausage. I uncase it, pinch it up and fry it first.

Love this, thanks for all the ideas! I make your jambalaya at home all the time, in addition to out camping. It's easily one of my favorite budget friendly meals for anytime.
Bulk up your eggs with mushrooms, peppers and onions. It makes a great breakfast skillet and adds healthy veg to your meals. Too many camping meals are low on veg.
Everything looked yummy and practical. I also use that jambalaya mix but I usually use kielbasa sausage.
Would love to see a backpacking/through hiking version of this!

Love the suggestions. Breakfast is my favorite camping meal! We get the house-brand flavors of oatmeal & get a box of house-brand plain oatmeal packets, too. We then eat a plain & a flavored (cuts down on sugar consumed).bI’ll check out the Kodiak!

jambalaya I use canned fire roasted tomatoes with onion, peppers already in it... ( I spend extra for anduille sausage and a handful of chopped ham to go in it)
As a person who eats a vegan diet it can be challenging for me. Oatmeal is a go to but I try to meal prep at home to make it easier on the trail. Happy trails.🤘🏻🥾⛰️

I wouldn’t eat that exactly as presented, but I would eat it with cleaner ingredients. I have a huge history of cancer in my family, so I try to avoid pesticides, additives, etc.

I can’t believe I forgot the bell pepper and onions when trying the one pot jambalaya! It was still good, just missing something and now I know what it was.
The best thing about this meal is being able to choose the sausage to make it your own. I think you used chicken in the video I watched and we tried the andouille (hot!!)

You’ve given me some ideas. I def do nice meals when I go camping. Often I do half spaghetti and half doodles that I make at camp. I add garlic and sauce of choice with grated hard cheese, parm or Romano. For lunches I love canned fish and crackers, sardines or smoked oysters and some olives and celery and carrots. Breakfast is usually eggs and meat, I find I can usually get breakfast sausage or bacon at a good price. Bacon is great cuz the grease can be saved to cook a high protein pancake that I top with yogurt. I usually cook based on what will spoil first if not eaten. Cook fish over the fire the first night with roasted veggies. Next morning cook up all the bacon and sausages that had been pulled frozen from my freezer at home. Bacon for breakfast as well as a nice blt for lunch. Sausage can go into the zoodles. Oatmeal with some Judees dehydrated cream and some soaked dried fruit and nuts makes a decadent breakfast. Yogurt doesn’t require as stringent of cold temps so extra bag of ice added to the cooler is fine for yogurt. The dried fruit and nuts makes a great snack during the day. As do the celery and carrots and zucchini that require little to no cooling. Only the last day do I finally break out the canned foods. I like potatoes with a packet of pulled pork. I can use the sausage grease to make a simple gravy with the powdered cream and a dab of flour and water and pieces of the pulled pork. It’s almost a shepherds pie if you sauté the celery and carrots with some onion.
