    Hi Gretchen, something you might want to note in your recipe for others is that homemade vs. store bought pumpkin puree are very different! Once I made the same recipe twice, one with homemade, one with store bought, and the batter had totally different consistency due to water content of the puree. Canned tends to have a lot less water in it than fresh. Recipe looks delish btw!

    This looks so delicious. I may try this over the holidays. Gretchen, for me, there is nothing better than spice cake. I don't want to do a boxed cake mix. I want to do one from scratch, but there are so many different recipes out there, with some recipes having just a few ingredients, and other recipes having a dozen ingredients. Can you please make a vegan spice cake recipe?

      Hi Ida thanks! Jason and I have been having a hard time getting together! Between both of us
      working full time (and he also has a family to tend to) AND he lives 2 hours away from
      me, it has been difficult to say the least! But we are hoping to get it
      together SOON!

    OMG...Gretchen you have outdone yourself! This looks incredible...but you sure as heck aren't helping my "to do" list! ;) Love you so much! Quick question I've been meaning to ask you. I'm a vegetarian but haven't committed to full vegan. The aqua faba, does is it have a bean taste at all? Not so much asking for me, but my family that I bake for (full on carnivores). Would they notice anything about it? They already think I'm insane for giving up meat (live in the south) 9 years ago, lol.

      LOL I know what you mane! OMG I ate sooo much pumpkin mousse already! LOL
      I do not taste any bean taste from the AF. I doubt they would notice that this was not vegan, I like to tell people AFTER they eat it and then they are sooo surprised!! Try it let me know what they say!

    Wow this looks so good. The color of your pumpkin mousse cake is beautiful. Did you add the agar powder as a way to keep your mousse cake from melting? Another great idea. I'm probably going to try the chilled pumpkin mousse first as it's still too warm here to turn on the oven, but not too warm to crave pumpkin mousse. You're inventively elevating vegan baking everyday!

      thank you! and yes the agar is for stabilizing the AF since I have found that adding it straight in has been deflating the mix, but as you saw this did not happen with the agar addition! Woohoo!!

    I'm almost 21 and I had NEVER Pumpkin in my life, I don't know the consistency neither the taste since we never had it in our russian-german home. But I'm so tempted to finally try Pumpkin because of Pumpkin cakes and good looking Lattes... and this mousse sound so YUM. Also when will we see your face again Gretchen? Or do you only film yourself infront of the camera in combi with Mr.Jason? :)))

      Hi! thanks! I hope you can try pumpkin for the first time and by using this recipe you will be sure to LOVE IT! It's really difficult for me to film myself and be "on" the video, so yes with Jason is the best way, however between us working full time and he has a family to tend to, not to mention her lives 2 hours away from me.... it has been more than difficult to get it together

    Gretchen, I have yet another question, unrelated to this video, but about a recipe ingredient. There is a recipe called impossible coconut pie, where all the ingredients are supposed to separate as they bake. Needless to say, my recipe didn't turn out. However, I just found another recipe with the same concept as the impossible coconut pie....the ingredients separate as they bake. That recipe is called magic cake. Eggs are needed. I can use aquafaba for the egg whites, but what can be used to replace the yolks?

    Hi! Love your recipes! :) I made this delicious cake yesterday but the mousse wasn't firm enough. (even after whole night in the fridge) Should I add more agar? Is there something else that helps making the mousse not too soft?

      Otherwise I would say be very careful on the measuring since too much (or too little) of something can throw off the delicate balance of a baking recipe.
      AND the coco butter seems to be a bigger help in stabilizing than the coconut oil - which did you use?

    Gretchen, should I start adding Agar to my Aquafaba buttercream recipe to make it more stable? Every time I make the buttercream it seems to be soupy :(

    Gretchen, I watched several videos that had chocolate in them, hoping to find a chocolate recipe, and didn’t find one. I don’t want store bought chocolate. I want to make it. I am on a kick of dipping foods, candy, etc into chocolate, mixing coconut oil in so that the chocolate sets. I was melting down vegan chocolate chips, but Whole Foods and Fresh Thyme stopped selling them in bulk, and bags of vegan chocolate chips in regular grocery stores cost as much as bulk chips. I want to make chocolate from scratch. But, I want a dark chocolate flavor or bittersweet flavor. Can you help with a recipe?

    This looks amazing, I'd love to make this. But I'm slightly confused.The ginger cake starts off at the top slightly pushed down, and then next scene it's at the bottom. So when you add the ginger cake, did you flip the mousse so that the ginger cake is at the bottom? Or did you push the ginger cake all the way to the bottom?
