    Low Calorie Keto Snack: Buffalo Cauliflower Bites
    Cauliflower
    Multiple observational studies have found associations between higher consumption of cruciferous vegetables and lower risk of certain types of cancer.
    It is believed that these benefits may be due to DIM and 13C.
    Diindolylmethane (DIM)
    DIM is found in members of the Brassica family, including cauliflower, brussel sprouts, kale, and broccoli.
    DIM plays a role in hormone regulation, in particular estrogen.
    DIM prevents drastic changes in estrogen levels, keeping the body balanced.
    It can prevent the conversion of testosterone into estrogen through inhibition of the aromatase enzyme and can convert more potent forms of estrogen into less potent forms, reducing the overall effects of estrogen.
    DIM has also been found to have a number of anti-cancer effects
    When we eat cruciferous veggies, a compound called glucobrassicin breaks down to I3C
    13C has been found to modulate biotransformation enzymes involved in the elimination and metabolism of carcinogens, toxins, steroid hormones and drugs.
    Similar to DIM, preclinical studies have found that 13C exhibits antiestrogenic activities that may reduce the risk of certain hormone-dependent cancers.
    Cayenne Pepper
    Buffalo sauce contains cayenne pepper, which has been used in Native American medicine and food for over 9,000 years.
    Capsaicin is the substance in cayenne pepper that is responsible for the spice, and it is known to help reduce pain.
    In traditional medicines cayenne pepper has been used to help those suffering from digestive problems, arthritis pain, muscle pain, lack of appetite, and circulatory problems.
    Pain Relief
    Capsaicin reduces substance P amounts, a chemical that signals pain from your body to your brain.
    Less substance P leads to fewer pain signals and thus less perceived pain.
    Capsaicin is often recommended for pain associated with rheumatoid and osteoarthritis, surgery, nerve damage, nerve pain, and lower back pain.
    Weight Loss
    While more studies are needed, some studies have found that cayenne supplements may help people feel full by suppressing appetite. This may help with weight loss.
    Celery
    Inflammation
    Celery contains a chemical apigenin. A study on mice found that apigenin reduced the expression of some pro-inflammatory proteins.
    Blood Pressure
    While evidence in human studies is lacking, studies have found that celery seeds help to lower blood pressure in rats.
    The researchers believe that the antihypertensive properties may be attributed to the actions of n-butylphthalide (NBP) and may be helpful in treating chronically elevated blood pressure.
    Cancer
    Both apigenin and another compound known as luteolin found in celery may have anti-cancer properties.
    In one study the researchers believe that luteolin may make cancer cells more susceptible to chemicals used in cancer treatments.
    Other benefits may include the stimulation of neurogenesis and a reduction of LDL, or bad cholesterol, in blood.
    Avocado Oil
    The health benefits of avocado oil are largely thanks to its healthy fat and antioxidant content
    Healthy Fats
    About 70% of avocado oil is made up of oleic acid, a heart-healthy monounsaturated omega-9 fatty acid.
    In studies on animals, it was found that avocado oil may reduce LDL cholesterol, blood triglycerides, and lower blood pressure. It may also help to increase HDL, the good cholesterol.
    Antioxidants
    Avocado oil contains lutein, a carotenoid that is known to have benefits for eye health.
    Consuming lutein may help to reduce the risk of macular degeneration and cataracts.
    Increases Nutrient Absorption
    When you consume veggies, it is important to also consume fats.
    Some nutrients are fat-soluble, meaning that we need fat in order to absorb these vitamins.

    Organic Cold Press Coconut Oil at or below 350F is better to use than Avocado because Avocado Oil is more processed not because of the heat point (The processed Avocado oil is the one with a high smoke point). It is best to make your own buffalo hot sauce - super easy to do. You can grate your own turmeric too - fresher is better. Also it is best to not cook directly on an aluminium sheet. Add some parchment paper on top of the sheet or a Pyrex dish.
    Best to make your own buffalo sauce. I just looked up the ingredients in that bottle and there are two ingredients that are not healthy.... 1. Soybean Oil 2. Natural Butter Flavor. That means 1. GMO rancid oil 2. It is not butter and might be a chemical.

      fat also helps it absorb, you'll get a bit from the coconut oil but yes, might as well make it super absorbed!

    Pro hack: Crack some fresh peppercorns all over those "wings" to get the piperines. Piperines aid in the absorption of curcumin (The active component of Turmeric).

    I have had these cauliflower buffalo bites at a local vegan restaurant (I’m not vegan although I’ve tried it) and they’re delicious 😋 Thanks for throwing the recipe out here! Oh and congrats on the beautiful baby!! Fellow subscribers and other viewers, notice how passionate Thomas is about his work and the videos he puts out? If you’re like me you’re super impressed with his knowledge and perhaps just as much by his pronunciation of these 13 syllable words...😳 if , like me, you find yourself having trouble keeping up w him, click on the 3 vertically stacked dots on the top right of the screen, and then click Playback speed...I find that .75x works just about right...👍🏼

    I’ve been watching a lot of your videos and they’re great! Couple very specific questions:
    1) Will matcha break a fast (since it’s the leaves and not steeped leaf water)?
    2) Will MCT oil break a fast?
    3) What about L - Carnitine?
    4) How do you select the best turmeric/curcumin supplement? I used to be under the impression it was very hard for your body to absorb and was told to take it in conjunction with pepperine (even if that meant chewing on black pepper corns 😰).

      Best to make your own buffalo sauce. I just looked up the ingredients in that bottle and there are two ingredients I really didn't like.... 1. Soybean Oil 2. Natural Butter Flavor. That means 1. GMO rancid oil 2. It is not butter and might be a chemical.

      Try using Frank's Red Hot Cayenne Pepper Sauce and add melted butter. It's a pretty short ingredients list.

      Yes, any Hot Sauce that is just a few ingredients you can pronounce and come from nature is best. I get mine from Aldi, Burman's Hot Sauce is about $1 per bottle. (it's the only thing I get there)

    Thanks for your videos Thomas. You are very informative. Ive been doing the intermittent fasting for two weeks now. 13 out of 14 days. And I was so surprised that I don't feel hungry and I'm very focussed and alert. Not to mention my winter belly is disappearing and the vertical lines of my abs are back again! I've also got the Pink Himalyan salt, creme of tartar, cacoa powder, apple cider vinegar etc.

      Thanks Sten. Thomas' advice makes the fasting quite easy to do. When I tell my Zumba students, work colleagues and friends that I'm doing intermittent fasting most days they always gasp. As though I'm doing some harm to myself. Modern society is too used to gorging ourselves with food around the clock. No wonder many people are fat now!

      When you eat high quality foods that your body can use your body stops craving. Also the cravings come from the insulin dips too. There are some people who eat right, workout, sleep, meditate, etc that still can't lose weight. I have a lot of people come to my office like that, but for the most part and most people it is easy to lose weight.

    Piperine in black pepper should help the body more efficiently absorb turmeric/curcumin. You might also roll them in "breading" maybe ground flax

    You can absorb more turmeric by adding black pepper. It deactivated the enzyme in the liver than breaks it down.

    I've reached my weight loss goal about 1.5 moths ago (96->76 kg in 5 months @ 183cm).
    Jumped off low carb (I liked it but it's too tedious), but I still do IF (skip dinner) most of the days cuz it just lets me sleep and wake up so well, every morning I wake up early without alarm clock and feel like I can take on the world!
    I also returned to eating a bunch of carby fast food a few times a week, but I also started doing strength training twice a week. I gained like 2.5kg, but I didn't see any fat appear, so I guess that's mix of water weight and a bit of muscle...
    I don't know why am I writing this - probably just seeking confirmation.

    Actually, if you want the turmeric to be absorbed by the body, add black pepper to the cauliflower after you’re done cooking it. I works as a catalyst for the turmeric to be absorbed.
    Side note: Like the other oils mentioned, black Pepper can become toxic from higher heats. So put it on the dish after you’ve removed it from the oven.

    Prebiotics are not only food for "good bacteria", but can nourish also bad bacteria. So if You have problems with bad bacteria - watch out.
    For quicker marinate process You can use some vacuum containers. It's a lot faster then waiting 20+ minutes and there's better results (when there's low pressure inside vacuum container the food expand a little and all the spices sink deep into it).

    Why does he use powdered turmeric? Like how do we not know it's not adulterated? And does it have the same benefits as fresh? Maybe I am paranoid but keep in mind, tilapia is sold in stores too.

    Put parchment or aluminum foil on the tray or use a paste of baking soda with hydrogen peroxide so it’s easier to scrub

    I thought I saw in one of your previous videos that avocado oil has a higher smoke point than coconut oil. but for this recipe you still recommend coconut? also, your videos are changing my life for the better and I can't thank you enough

      Both would work. Avocado does have a high smoke point but I would only use for searing. coconut is great for everyday use.

    Confused... You say to use coconut oil over avocado oil.. Yet coconut oil has a smoke point of 350° and avocado oil is 520° among the highest you can cook with. Other then that recipe looks good.

      He says we are going to he cooking this at a high heat and need a stable oil. And again he is cook8ng at higher temp then the smoke point of coconut oil which is 350 so yes that will ruin the oil.

      I would cook it with coconut oil at or below 350F. Avocado oil is super healthy if it is cold pressed and unrefined, but because it is unrefined it still has a lot of nutrients that are heat sensitive. I would use that for salad dressing. The heat stable avocado oil has been refined. It is lacking many of the nutrients that were originally in it. That makes it heat stable and suitable for cooking. It wouldn't be a terrible oil for health purposes, but not the best either.

    So why aren't you adding black pepper along with the tumeric? You've said before that the only way to get the benefit of turmeric is with black pepper. Have you changed your stance on that?

    I love cauliflower bites, those look fabulous Thomas. Do you need to add black pepper and ginger to activate the Tumeric or is it not necessary in this case?

      Pepper greatly improves the absortion of tumeric. Oil and heat haven't been as well researched as pepper, but it is assumed to help as well.

      This is like...the third DeLauer video I've seen where he puts turmeric in something without adding black pepper. I'm pretty new to this stuff, but I thought that was a pretty well known technique to enhance the absorption of curcumin... Very strange. It's not like pepper would be out of place or anything. I'd definitely give em' a good dusting with the old pepper grinder, as cayenne pepper does NOT contain piperine (to my knowledge at least).

      I’m pretty sure he added cayenne did he not? So I think that helps with the turmeric absorption. Not sure if black pepper and cayenne have the same effect on turmeric

    Hi Thomas, You're videos are great. About the absorbion of turmeric, interesting you say this, as I have been including many of your Turmeric recipes into my diet. I am also taking part on your intermittent fasting program and loving it. OK, so a friend mentioned to me the other day that black pepper allows you to absorb turmeric, have you come across this theory?

      I've heard that too. When making my Turm Tea, I fresh ground some black peppercorns, so the turm can be better absorbed.
