Low Calorie Keto Snack: Buffalo Cauliflower Bites
Cauliflower
Multiple observational studies have found associations between higher consumption of cruciferous vegetables and lower risk of certain types of cancer.
It is believed that these benefits may be due to DIM and 13C.
Diindolylmethane (DIM)
DIM is found in members of the Brassica family, including cauliflower, brussel sprouts, kale, and broccoli.
DIM plays a role in hormone regulation, in particular estrogen.
DIM prevents drastic changes in estrogen levels, keeping the body balanced.
It can prevent the conversion of testosterone into estrogen through inhibition of the aromatase enzyme and can convert more potent forms of estrogen into less potent forms, reducing the overall effects of estrogen.
DIM has also been found to have a number of anti-cancer effects
When we eat cruciferous veggies, a compound called glucobrassicin breaks down to I3C
13C has been found to modulate biotransformation enzymes involved in the elimination and metabolism of carcinogens, toxins, steroid hormones and drugs.
Similar to DIM, preclinical studies have found that 13C exhibits antiestrogenic activities that may reduce the risk of certain hormone-dependent cancers.
Cayenne Pepper
Buffalo sauce contains cayenne pepper, which has been used in Native American medicine and food for over 9,000 years.
Capsaicin is the substance in cayenne pepper that is responsible for the spice, and it is known to help reduce pain.
In traditional medicines cayenne pepper has been used to help those suffering from digestive problems, arthritis pain, muscle pain, lack of appetite, and circulatory problems.
Pain Relief
Capsaicin reduces substance P amounts, a chemical that signals pain from your body to your brain.
Less substance P leads to fewer pain signals and thus less perceived pain.
Capsaicin is often recommended for pain associated with rheumatoid and osteoarthritis, surgery, nerve damage, nerve pain, and lower back pain.
Weight Loss
While more studies are needed, some studies have found that cayenne supplements may help people feel full by suppressing appetite. This may help with weight loss.
Celery
Inflammation
Celery contains a chemical apigenin. A study on mice found that apigenin reduced the expression of some pro-inflammatory proteins.
Blood Pressure
While evidence in human studies is lacking, studies have found that celery seeds help to lower blood pressure in rats.
The researchers believe that the antihypertensive properties may be attributed to the actions of n-butylphthalide (NBP) and may be helpful in treating chronically elevated blood pressure.
Cancer
Both apigenin and another compound known as luteolin found in celery may have anti-cancer properties.
In one study the researchers believe that luteolin may make cancer cells more susceptible to chemicals used in cancer treatments.
Other benefits may include the stimulation of neurogenesis and a reduction of LDL, or bad cholesterol, in blood.
Avocado Oil
The health benefits of avocado oil are largely thanks to its healthy fat and antioxidant content
Healthy Fats
About 70% of avocado oil is made up of oleic acid, a heart-healthy monounsaturated omega-9 fatty acid.
In studies on animals, it was found that avocado oil may reduce LDL cholesterol, blood triglycerides, and lower blood pressure. It may also help to increase HDL, the good cholesterol.
Antioxidants
Avocado oil contains lutein, a carotenoid that is known to have benefits for eye health.
Consuming lutein may help to reduce the risk of macular degeneration and cataracts.
Increases Nutrient Absorption
When you consume veggies, it is important to also consume fats.
Some nutrients are fat-soluble, meaning that we need fat in order to absorb these vitamins.

I would really love a video on a meal plan using kimchi as an ingredient with scientific information on fermented foods. I enjoy all your videos and congrats on the new baby.
Organic Cold Press Coconut Oil at or below 350F is better to use than Avocado because Avocado Oil is more processed not because of the heat point (The processed Avocado oil is the one with a high smoke point). It is best to make your own buffalo hot sauce - super easy to do. You can grate your own turmeric too - fresher is better. Also it is best to not cook directly on an aluminium sheet. Add some parchment paper on top of the sheet or a Pyrex dish.
Best to make your own buffalo sauce. I just looked up the ingredients in that bottle and there are two ingredients that are not healthy.... 1. Soybean Oil 2. Natural Butter Flavor. That means 1. GMO rancid oil 2. It is not butter and might be a chemical.
+ Dr. Sten Ekberg - I agree. 👍
Dr. Sten Ekberg what recipe do you use to make buffalo sauce ?
I have a super easy and healthy buffalo sauce recipe on my channel. Look for Grilled Chicken Wings Recipe or How To Make Baked Chicken Wings Sauce Recipe. There is a recipe section you can find it under Healthy Recipes. Keto Lunch or Dinner Recipes
Dr. Sten Ekberg yeah but I don’t like all my food tasting like coconut
If you want to absorb the turmeric, just add black pepper to the mix.
You're welcome. 👍
fat also helps it absorb, you'll get a bit from the coconut oil but yes, might as well make it super absorbed!
why wouldnt the cheyenne from the buffalo sauce help?
Just made these and I’m IN LOVE! These were amazing!!
I thought the buffalo was alive! That dog's refelction in the oven door cracked me up... #itsalive!
you're a good man Mr. D! You impact many of us. How much so? You'll never know! keep changing our bodies and minds!
Pro hack: Crack some fresh peppercorns all over those "wings" to get the piperines. Piperines aid in the absorption of curcumin (The active component of Turmeric).
I have had these cauliflower buffalo bites at a local vegan restaurant (I’m not vegan although I’ve tried it) and they’re delicious 😋 Thanks for throwing the recipe out here! Oh and congrats on the beautiful baby!! Fellow subscribers and other viewers, notice how passionate Thomas is about his work and the videos he puts out? If you’re like me you’re super impressed with his knowledge and perhaps just as much by his pronunciation of these 13 syllable words...😳 if , like me, you find yourself having trouble keeping up w him, click on the 3 vertically stacked dots on the top right of the screen, and then click Playback speed...I find that .75x works just about right...👍🏼
Hey, he’s a busy new parent!!!
Thanks again Thomas!!
The baby is beautiful Thomas, CONGRATULATIONS ~!!~
Vincent Michael Quinn thank you!
This video showed up in my feed in September 2019! Thank you, UA-cam! More importantly, thank you, Thomas DeLauer. I’ll be making this recipe this weekend! Woohoo!!
Love the simplicity of your kitchen, pallets for shelves is pretty cool. Reminds me a bit of Chipolte's
Yes, what Aw Snap stated...Black Pepper is the Groom to the Turmeric Bride. The bonus is they taste better together as well! Great Recipe and superb Scientific Demonstration!
Great toaster oven. I've been having one for a year now.
This looks amazing. I would love to see more cooking videos from you.
This channel is absolutely FABULOUS!! 😃Thank you Thomas!
Boil turmeric with black pepper in full fat milk for a few minutes to ensure absorption .
Love all your scientific jargon
I’ve been watching a lot of your videos and they’re great! Couple very specific questions:
1) Will matcha break a fast (since it’s the leaves and not steeped leaf water)?
2) Will MCT oil break a fast?
3) What about L - Carnitine?
4) How do you select the best turmeric/curcumin supplement? I used to be under the impression it was very hard for your body to absorb and was told to take it in conjunction with pepperine (even if that meant chewing on black pepper corns 😰).
Thank you Thomas for this video. I am up late working and I wanted to make a healthy low carb Vegan snack. I have all the organic ingredients for this recipe already at my finger tips.
Huge props for making this video. Such an easy recipe. I'm going to add a whole bunch of bacon and blue cheese!
Yum Yum, now I'm hungry for that Buff Cauli & those condiments. Good for Keto, too! Thanx/
That Buffalo Sauce better have some science in it
Best to make your own buffalo sauce. I just looked up the ingredients in that bottle and there are two ingredients I really didn't like.... 1. Soybean Oil 2. Natural Butter Flavor. That means 1. GMO rancid oil 2. It is not butter and might be a chemical.
Try using Frank's Red Hot Cayenne Pepper Sauce and add melted butter. It's a pretty short ingredients list.
Yes, any Hot Sauce that is just a few ingredients you can pronounce and come from nature is best. I get mine from Aldi, Burman's Hot Sauce is about $1 per bottle. (it's the only thing I get there)
Lmfao I’m dead
Siim Land Hahaha😅
Made it today for dinner, tasted pretty good, even my wife had some although she is not a turmeric fan
Thanks for your videos Thomas. You are very informative. Ive been doing the intermittent fasting for two weeks now. 13 out of 14 days. And I was so surprised that I don't feel hungry and I'm very focussed and alert. Not to mention my winter belly is disappearing and the vertical lines of my abs are back again! I've also got the Pink Himalyan salt, creme of tartar, cacoa powder, apple cider vinegar etc.
Congratulations!
Thanks Sten. Thomas' advice makes the fasting quite easy to do. When I tell my Zumba students, work colleagues and friends that I'm doing intermittent fasting most days they always gasp. As though I'm doing some harm to myself. Modern society is too used to gorging ourselves with food around the clock. No wonder many people are fat now!
When you eat high quality foods that your body can use your body stops craving. Also the cravings come from the insulin dips too. There are some people who eat right, workout, sleep, meditate, etc that still can't lose weight. I have a lot of people come to my office like that, but for the most part and most people it is easy to lose weight.
Wonderful! Thank you very much, dear friend! 🎄🎄🎄 Best regards from London! 💗😉😊🎄🎄🎄
Cristian Gabriel Groman thank you for watching!!
Thomas can you please give us some ideas for salad dressings? My favorite is olive oil and red wine vinegar. But I would like some variety! Love your channel and congrats and your adorable mini Thomas! ❤❤❤
Piperine in black pepper should help the body more efficiently absorb turmeric/curcumin. You might also roll them in "breading" maybe ground flax
Your passionate for this and health. Thank you for your hard work.
I used to make this all the time....so good.
In the oven cooking away! Can't wait.thank you!
Love the dog cameo at :16
Thank you , definitely will try these.( I just made cauliflower pizza crust / pizza for dinner - yummy, and now thanks to you I know just how healthy it is)
Tried it and it tantilized my taste buds! Very awesome meal! Keep up the great info brother!
Wonderful colourful, spicy and healthy receipe. Thanks Thomas. So glad to see your beautiful baby!
koundamanee thank you for watching!!
Nice video Thomas. Very insightful and very entertaining. Liked the little “lifestyle” clips too.
Keith Bussard thank you for tuning in!
You can absorb more turmeric by adding black pepper. It deactivated the enzyme in the liver than breaks it down.
Amazing!! My son 6 yrs and my husband really love it, so much didn’t wanted to share!!! And I’m sure I’ll be doing these very frequently !!!delicious!!!
👍🎉🎉Yay!! This was great! Thank you for the baby photo shots!!! 👶So glad your wife & baby are doing well. Yay!! 🎉🎉 ....Oh and thanks for the info & terrific recipe idea too. 😜😋😁
....
LovingAtlanta glad you enjoyed it! Thanks for tuning in!
Your videos are amazing. So informative!
I would have one question/request.
Can you make a video about intermittent fasting while on keto diet?
And maybe how weight lifting or HIIT affect your ketosis and weight loss, what you need to adapt to do all that.
Keep it on!
Hey thomas i think that we will love a video guide to combine intermment fasting and keto dieting
great video as always!
Okay.... I tried this and it was better than what I thought. I screwed up and used evoo because I went by memory. Great receipe brother.
I've reached my weight loss goal about 1.5 moths ago (96->76 kg in 5 months @ 183cm).
Jumped off low carb (I liked it but it's too tedious), but I still do IF (skip dinner) most of the days cuz it just lets me sleep and wake up so well, every morning I wake up early without alarm clock and feel like I can take on the world!
I also returned to eating a bunch of carby fast food a few times a week, but I also started doing strength training twice a week. I gained like 2.5kg, but I didn't see any fat appear, so I guess that's mix of water weight and a bit of muscle...
I don't know why am I writing this - probably just seeking confirmation.
Would really love to see what you eat over the course of a week actually being able to visually see would be great
OMG, that was fantastic. Everyone in my family lovvvvvved it (even the kids). The turmeric addition was a good call. We had it with homemade blue cheese dressing. Can’t wait to make it again.
Actually, if you want the turmeric to be absorbed by the body, add black pepper to the cauliflower after you’re done cooking it. I works as a catalyst for the turmeric to be absorbed.
Side note: Like the other oils mentioned, black Pepper can become toxic from higher heats. So put it on the dish after you’ve removed it from the oven.
Made it tonight for the first time, it was amazing, 25 Mins on 450, pulled out put Cheese on top and went in for another 5 mins. Thanks
Did you saw the cat walking by lol
William Polio loved it hahaha!! 🤣😻
I thought it was a dog
Prebiotics are not only food for "good bacteria", but can nourish also bad bacteria. So if You have problems with bad bacteria - watch out.
For quicker marinate process You can use some vacuum containers. It's a lot faster then waiting 20+ minutes and there's better results (when there's low pressure inside vacuum container the food expand a little and all the spices sink deep into it).
Just ate a ton of this. Sooo good!
Love, love your channel! Confused about the turmeric- you mentioned all the benefits of adding turmeric, yet then you say we can’t absorb it? Is there any way to fix that??
I just made these for Super Bowl snack and they blew me away! Great recipe!
I come here for the scientific explanations. 😁 Im not being sarcastic. I think its cool.
Should add some black pepper to maximize the turmeric absorption and effects ( curcumin & piperine)
Great job as always, Thomas
Lucas Hirl thank you for watching!
Cameo appearance by his dog @0:16, (reflection in oven door glass... LOL...
I tried this last night and it was good. But next time I am going to try it with making a batter using coconut flour.
Hey Thomas, that looks very good I'm going to try it.
Ps. Your baby is so cute!!😘
Love the vids!!!! You rarely mention eggs in ur videos. Is there a reason for this or is it just cause you may not like eggs!!! Thank you for the vid btw they are really really useful and super appreciate it!!!
OMG, this looks amazing! Thank you!
High Energy Girl thank you for watching!
WOW! Sooo good. This was super delicious. I made a mixture of coconut oil and Frank's Red Hot. . Absolutely awesome treat.
Looks delicious. Great information, too!
As for kale, i don't know how anyone can eat that stuff. :)
I just made this and then ate the whole head in one sitting 😂 it was so good thanks for the recipe thomas
I love it Thomas.
I appreciate you and all your hard work to share so much great healthy information !!!!!
Great recipe, however too bad you don't have a sauce recommendation which excludes soybean oil (highly inflammatory oil). Thank YOU kindly
What are your thoughts on colloidal silver? I really enjoy your channel and all the real science
Congratulations on the beautiful baby!
harpmyday thank you!
Dang. I’m making this for Dinner tomorrow. Thanks.
Kent Keller thank you for watching!
Nice way to spice up your cauliflower. Thanks bro.
Mitch Allan thank you for watching!
Why does he use powdered turmeric? Like how do we not know it's not adulterated? And does it have the same benefits as fresh? Maybe I am paranoid but keep in mind, tilapia is sold in stores too.
Put parchment or aluminum foil on the tray or use a paste of baking soda with hydrogen peroxide so it’s easier to scrub
I thought I saw in one of your previous videos that avocado oil has a higher smoke point than coconut oil. but for this recipe you still recommend coconut? also, your videos are changing my life for the better and I can't thank you enough
Both would work. Avocado does have a high smoke point but I would only use for searing. coconut is great for everyday use.
thank you so much. and just noticed your username, u got yourself a new sub, been looking for more keto recipe channels lol
Yeah! lots of recipe videos planned :)
I just answered this without looking at the other comments. "Organic Cold Press Coconut Oil is better to use than Avocado because Avocado Oil is more processed not because of the heat point. It is best to make your own buffalo hot sauce - super easy to do. You can grate your own turmeric too - fresher is better. Also it is best to not cook directly on an aluminium sheet. Add some parchment paper on top of the sheet."
The Keto Chef I just subscribed to you I’m going to check out your recipes. Hope they’re easy.
Hey Thomas! Can you make a keto blue cheese? keto ranch dressing? These are delicious! Thank you
Greetings from the East Coast. Gr8 information Thanks 4 the recipe. Will spread 📢 the word, Looking forward 2 making it. 🇺🇸
Thumbs up cause I saw the reflection of one your dogs on the glass stove lol
Yes please!!!
Roses Ammon thank you for watching!
Yesssssssssss, more vegan keto recipees please ! Maybe something with romanesco ? Thank You 🙏
For easy clean up: cover pan with parchment paper.
Thomas, every time I ingest tuermic I feel unbelievable ! I'd be awesome if you just did an in depth video explaining more of the science behind what's in Turmeric.
Micheal L look up placebo effect, lol
ouch........
He did a few videos on it already, use the search box, eg look at his gold milk video
GOOD STUFF THANKS
Hey Thomas, what’s a typical cheat day like for you and how do you approach it?
Confused... You say to use coconut oil over avocado oil.. Yet coconut oil has a smoke point of 350° and avocado oil is 520° among the highest you can cook with. Other then that recipe looks good.
He says we are going to he cooking this at a high heat and need a stable oil. And again he is cook8ng at higher temp then the smoke point of coconut oil which is 350 so yes that will ruin the oil.
And a simple bit of research will show avocado oil is extrmeley healthy to cook with.
I would cook it with coconut oil at or below 350F. Avocado oil is super healthy if it is cold pressed and unrefined, but because it is unrefined it still has a lot of nutrients that are heat sensitive. I would use that for salad dressing. The heat stable avocado oil has been refined. It is lacking many of the nutrients that were originally in it. That makes it heat stable and suitable for cooking. It wouldn't be a terrible oil for health purposes, but not the best either.
Video suggestion: Can you talk about sugar blocker like L-arabinose? Does it work?
Oh my gosh! I seriously teared up when I saw your baby! Melt my butter! 😍
Great Recipe!! I’m going to try this soon.
enjoying these for Keto tips - shall give it a go
Josh Hiroti thanks for tuning in!
Often tune it - high praise for this channel over the years, and share every now and again
So why aren't you adding black pepper along with the tumeric? You've said before that the only way to get the benefit of turmeric is with black pepper. Have you changed your stance on that?
Awesome idea! Thanks!
KetoFit For Life thanks for tuning in!!
So cute!!!!! Little Thomas!!!!!
Pinky Sachdeva thank you!!
More or to snacks please!
I love cauliflower bites, those look fabulous Thomas. Do you need to add black pepper and ginger to activate the Tumeric or is it not necessary in this case?
Pepper greatly improves the absortion of tumeric. Oil and heat haven't been as well researched as pepper, but it is assumed to help as well.
This is like...the third DeLauer video I've seen where he puts turmeric in something without adding black pepper. I'm pretty new to this stuff, but I thought that was a pretty well known technique to enhance the absorption of curcumin... Very strange. It's not like pepper would be out of place or anything. I'd definitely give em' a good dusting with the old pepper grinder, as cayenne pepper does NOT contain piperine (to my knowledge at least).
I’m pretty sure he added cayenne did he not? So I think that helps with the turmeric absorption. Not sure if black pepper and cayenne have the same effect on turmeric
I heard if you add black pepper it's make the Corcum more absorved
Hi Thomas, You're videos are great. About the absorbion of turmeric, interesting you say this, as I have been including many of your Turmeric recipes into my diet. I am also taking part on your intermittent fasting program and loving it. OK, so a friend mentioned to me the other day that black pepper allows you to absorb turmeric, have you come across this theory?
This is so very addicting. It's my new go to side!
I like your recipes, thank you.
Love this video. Can I ask for a video on fermented foods. An why we should add them to our daily diet.
A video on how to prepare our own fermented foods! Intro in how to brine and pickle our own vegetables!
Doesn't black pepper increase the uptake of turmeric in the body???
I've heard that too. When making my Turm Tea, I fresh ground some black peppercorns, so the turm can be better absorbed.
Yes oil and fresh black pepper with piperine
Please do a video on ketone supplements!
Ok I just made this and it’s amazing!!!! Ppl keep asking me how to make it so I send them ur video lol I also made the fat bomb u made and that was great as well thank u!!! Please keep making Keto recipes!!! ❤️
I love to eat healthy, I will make those.
I'm going to try this recipe this week, they look so good.
That's one sweet looking pooch you have, he/she's just the right size (fun size) lol
Do you ever use black pepper to increase the bioavailability of the turmeric?
