Homemade cottage cheese in the IP is pretty easy. I do 123° for the heat, then vinegar at 1 c per gallon. Drain the whey, cut the curd, and use homemade greek yogurt to make it creamier, but you could use milk or cream too. Can add salt if you want. If you are wanting to reuse the whey you would be looking for uses for acid whey.

I've used Nancy's as a starter for sour cream..... took about 48 hours which was longer than most videos said it would, but probably had to do with temp in my house. Turned out great and the kids love the flavor that way.
@barbmurphy8770 oh my, it's been awhile. I just searched homemade sour cream on here and picked one that sounded doable. I know I used quart jars, and it seems like I sat it on the counter rather than incubating in the instant pot. I'm not sure why I did that, and my guess is if I had put it in a low water bath on the yogurt incubation function it would have thickened quicker..... but I couldn't say for sure. And maybe that has to do with temp that kills whatever is making it sour cream. I know when I tried low histamine yogurt that temp was 77 degrees to not kill the starter. It might take me a hot minute but I'll try to find details on the video I went with so you can find it.
@marygemar3840 Okay, I just went and checked my saved videos and I know I didn't use the one sour cream video I have because it calls for microwaving the cream and I don't own a microwave. As best I can remember I used quart jars on the counter and just filled 3/4 with cream and put a blob of the Nancy's in and stirred it for starter. Left on the counter and it took about 48 hours. Now, I know I did 2 jars when I did it, and it seems I put them different places in the kitchen at first, but it seems to me when it turned it was near the stove. Like a few feet away. I wish I could tell you if I did anything special in terms of heating the cream up, but I really have no idea. I know I was watching quite a bit of Mary's Nest back then, and also a lady that does scientific testing on various Homesteading type things. I want to say that channel starts with an R. But I generally just do a search, watch 3 or 4 videos and go for it with this type of project.

So about why your meat has sugar in it: i read that it's part of the curing process and it is also used as an antibiotic function. Plus it hides any foul odors or taste.

So I was thinking since you have windows in your pantry, you could easily grow some of your main herbs you use a lot, that coukd save $$ and you could use it for teaching planting for your younger kiddos, parsley, chives, cilantro, basil....they all grow well in small pots, also parsley stores great in the fridge in a glass with a little water in in, green onion stores best 1 of 2 ways with the root end only in plastic bags they come in or in a glass with a little water....... Also just so you know Aldi has really good ketchup, the simple ketchup, has good ingredients, and it's cheaper then azure standard....... just thought you would like to know if you ran out of azure ketchup and needed a backup plan. By the way congratulations on your calves! What a super fun time not to mention the learning you will have as well as your children, they will know so much by the time they are ready to go out in the world!! Great job mom, & dad!!!

Love this video. I paid 102.00 for a 20 lb organic turkey in Canada. Lots of meals but it was worth it. No sugar added. It is in so many things. I never thought about turkey,! Chocolate has been hit by a virus. Hopefully they will get it under control soon. Happy Thanksgiving
Save that turkey carcass and make bone broth, if you haven’t already! 🤩 That’s another great way to stretch the thanksgiving turkey. I currently have my turkey bones simmering in my roaster pan, and plan to make turkey soup for dinner then pressure can any leftover broth.
Costco's organic corn is in the frozen section. It comes in a huge bag. However, next year, when it's in season, buy corn on the cob from a farmer. Blanch it, and freeze it either right on the cob, or cut off the corn and freeze it .

I am sure if you google the “laoganma recipe” which is the transliteration of the characters above, you will find some good copy cat recipes for exact measurements, which I don’t have. I just throw everything together.

Don't rinse mushrooms under water. It will make them rubbery and they will spoil faster. 😊
