Mushroom Curry : Vegan Indian Recipe

  • Mushroom Masala or mushroom curry is a delicious Indian Curry made with mushrooms, onions, tomatoes, spices and herbs. Mushroom Curry is simple to prepare and so flavorful. Cashew Cream is used to prepare this creamy Vegan Mushroom curry/ masala but you can replace it with coconut cream too. Mushroom Curry is perfect Vegan lunch or dinner recipe when clubbed with rice, chapatti, naan or paranthas. The Mushroom Masala is one those easy Vegan Indian curries which everyone will love.

    Ingredients List for Mushroom Masala :
    Mushrooms (300 - 400 grams)
    Onion (1 Large finely chopped)
    Tomato (1 Medium finely chopped or tomato paste)
    Ginger (2 Inches grated or finely chopped)
    Garlic (6-7 Cloves grated or finely chopped)
    Parsley/coriander leaves (30-40 grams finely chopped)
    Cashew Paste (3-4 Tablespoon)/ Vegan cream or Cashew powder
    Oil (3-4 Tablespoons)
    Salt (2-3 teaspoons or as per taste)
    Ground Spices - (Cumin seeds (1 teaspoon), Black pepper (5-6), Cardamom (2-3) and Cinnamon one small piece)
    Spices (Turmeric powder (1/3 teaspoon), red chili powder (half teaspoon), Coriander powder (half tablespoon), Cumin Powder (half tablespoon) and Garam Masala Powder (1 Teaspoon)

    You mentioned can you ginger garlic paste instead of grated ginger and garlic.
    How many tablespoons should i use? And would it taste the same?
    For cashew paste, do i need to soak the cashews before?
    Edit : Used 2 tablespoon of ginger garlic paste.
    Soaked cashew for about 20 mins. And blended with some water.
    Love the recipe, it came out well. Very tasty.
    Qn : Can we add Vegan butter?
