Yes you can use skim milk and not use the essence bit it won't taste the same of course. Boiled Custard is usually made with custard powder, we have a video on this channel you can check it out.

Hi Jaya, you can use Custard Powder but The Custard Powder method is different. you mix custard powder in water, add to boiling milk and stir until it thickens and remove from stove. Then put in Fridge.
It is best to use one that states that it is Oven safe, however it is also said that all thick glassware are made to withstand oven temps. so it should be ok. You have to decide if you want to try it or not based on that.

Yes you can
I left out 1 can of evaporated milk to make it denser. Lacking almond extract, replaced with vanilla.
The custard turned out well, but next time I'll add another 1/2 can of evaporated milk.
