There’s a much easier way to eliminate bitterness issues. The trick is, to buy male Eggplants. They contain less seeds than female Eggplants. Determining the gender of your Eggplant is easy. Simply check the bottom notch. If it looks like a horizontal gash, it’s female and, contains more seeds. If the notch looks like a round button, that means its male, and has a lot less seeds. It won’t taste bitter, so you won’t need to draw out any moisture. As far as the Eggplant “haters,” go? The reason why they hate it is because of the bitterness. If they buy male Eggplants, they might start liking them again, since there’ll be little or no bitterness. The twangy effect of salt, cumin, and lemon juice, balances everything out and, creates a nice flavor profile in general. Keep up the good work!
my mom abd i love your show and presentation we are having a bumper crop of eggplants yesterday we charcoal grilled eggplant for baba ghanoush today we are tring this recipe thank you
I love how you make your recipes more American friendly using products we may already have at home. I have purchased your book and really want to try many of the recipes. Thank you.
That sandwich looks so good. I’m Italian, and usually only use eggplant to make eggplant Parmesan. Your recipes look delicious and I would love some new recipes using eggplant. Thanks.
Wonderful, there are a lot of mediterranean crossovers with Italian cuisine for sure, in that we use similar ingredients. Just the treatments of the ingredients are slightly different, hope you enjoy it! ;)
I love eggplant! No one in my family does but I love love it! More recipes! I went to a friends Persian picnic and a lady had made eggplant w onion, tomatoes, olive oil and cooked it till it was melting. It was so good!
Hi, the pickled aubergine maqdous do you have the video for it,its filled with pine nuts n red bell pepper. All the way from Syria loved it want to learn how to make it
I love Maqdous; I make it twice yearly. All you've to do is google Lebanese Maqdous and you'll get many videos; I think Lebanese ones are the very best!
Dear blanche, thank you for your beautiful recipe. Honestly, i am always happy for your recipes. I remember, how you spoke with hoss zare and he told you, how his parents were killed. It was horrible. Unfortunately, today i am sad, because the mother of my good friend from Iran Miss zahra parhizkar , hurie masume, died. She was sick, we prayed for her.she was healed. Zahra told us, that she was better. Today zahra called me and with a great sadness in her voice and a cry told me, that her mother all of a sudden died. She was a muslim. I as a Christian feel the duty, that pray for the soul of hurie masume, who was a good woman, together with me, that Jesus takes her into heaven. I saw her in Iran. She was a good woman. She was 65 years old, when she died. Join with me in our common sympathy for zahra in our common Christian prayer for the soul of hurie masume. I do not know, when the burial Will be. Zahra and her family know. Do not bother. Pray with me a Christian prayer for the soul of hurie masume to be accepted by Jesus, by god in heaven. Thank you from the bottom of my heart dear blanche for your efforts. I honestly Love you from the bottom of my heart, dear blanche. Your friend, Danijela kelava from croatia😅 😘
Absolutely I will join you in prayers from afar for Zahra--so sad to hear this news! Always so depressing to hear when someone you care about has left the earth, must be so hard for your friend :(
I love true arabic bread (not westernized terrible version called pita) - best is old fashioned taboun like my aunt makes; second favorite bread is indian nan
There are many people, including a lot of people in my family, that dislike the skin. I take it off so they will enjoy the vegetable, but by all means if you enjoy it leave it on. ;)

Use the eggplant rounds as sandwich slices themselves! Fillings can be hummus, deli meat, chopped greens, chicken salad, egg salad, etc.

The skin of the eggplant is the best part...... 😢
There are many people, including a lot of people in my family, that dislike the skin. I take it off so they will enjoy the vegetable, but by all means if you enjoy it leave it on. ;)
