Pulikachal | Tamarind Rice Paste | மணக்க மணக்க புளிக்காச்சல் செய்வது எப்படி ?

  • Pulikachal is a thick paste required to make Puliyodharai, a traditional feast in Tamil Nadu. Made from Tamarind, red chilies and other handful spices cooked in sesame oil. Puliyodharai made from Pulikachal and rice is one of the integral part of train journeys. Pulikachal has a longer shelf life of upto 4 weeks, if stored in the refrigerator.

    INGREDIENTS
    1 big lemon size Tamarind
    ¼ tsp Turmeric Powder
    1 tsp Jaggery grated
    Salt To Taste
    FOR GRINDING
    2 tsp Coriander seeds
    2 tsp Urad Dal
    6 nos Red Chili I have used the long red chillies which are very spice. If you are using small and round chillies, you have to use atleast 12-15
    1 sprig Curry leaves
    ½ tsp Fenugreek seeds
    FOR SEASONING
    2 tbsp Gingelly Oil
    1 tsp Mustard seeds
    1 tsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
    1 tsp Split Urid Dal
    1 tbsp Peanuts roasted
    1 sprig Curry leaves
    2 nos Red Chili
    1 pinch Asafoetida (Asafetida / Hing)
    FOR MAKING PULI SADHAM / PULIYODHARAI RICE
    1 cup Cooked Rice

    So far this is the best recipe of pulikachal I have seen. Most people add pepper Jeera and spoil the taste of it. This is almost the same recipe that we follow except that we do not add Ural dal in our spice mix. Good job.

      Hello Maya. Thank you so much. Yes we have added hing. After adding turmeric to the tempering, we have added 1/4 teaspoon of hing. It comes around 3.43 (3 minute and 43 second) of the video

    The pulikaichal manifests itself as a plain sauce serving as a side dish to almost everything - from thayir saadham to dosai; and also as a magic potion that would turn rice into a food for the Gods themselves.😇
    And even when there is NO main dish, i am happy, because a ladle of pk in a cup of curd can be slurped like ice-cream.
    That is Heaven - right here on Earth - thanks to Subbulakshmi Mami. She reminds me of my Grandmother and mother who were great cooks in the Palakkad style.

    Long red chillies are not spicy. Only the round red chilli is hot/ spicy...
