May I ask if for the brand of this wok/frying pan you are using ? Did you season it prior to use ? How is it compared to say, an old school black metal wok ? Thanks so much !
Hihi Maevis. The wok/pan we used in this video is a granite coated non-stick from Shogun by La Gourmet. You do not need to do anything to season the pan before using. When using non-stick pan, we recommend avoiding the following: 1) do not use olive oil for cooking because it has a low smoking point which will spoil the coating of the pan. 2) do not use metal spatula or anything metal to cook 3) do not cook hard ingredients such as crabs, shellfish (with shells on) etc 4) do not use too high heat to cook. Normal household stove is fine because the fire strength is moderated. Hope this helps. Happy shopping!
I hope if i add in 4 oil soaked salted fish, rice won't be too salty. Maybe 3 is better? Why not fry chicken separately set aside then fry salted fish with the rice & rest of ingredients then add back the chicken? Can it be done that way?
No, not canned. It's usually salted and sundried. Some Asian supermarket frozen section has them. Latin market has dried fish but I am not sure if they are salted.
Hi Fight Tyranny, the salted fish we got came in a glass bottle, filled with oil. It does look like packed sardines in oil from the outside. Like how livefree described, there are sundried ones too but we used the ones soaked in oil because we felt it is most fragrant when used in fried rice. Hope this helps!

Hi Paulson. Thanks so much for watching our video. Unfortunately salted fish isn’t the same as fish sauce. Fish sauce is quite similar to light soy sauce. If you can’t get hold of salted fish, then you might wanna skip it totally. In your fried rice is not salty enough because of the missing salted fish, you can increase the amount of light soy sauce or fish sauce used. Happy cooking!
Same recipe as the previous with the crispy prawn. This dish is flexible.. can use many variations.. mixed vege... cubed ham/luncheon meat... corned beef....etc..
I just made this. It's really good. But the white pepper either has to be freshly ground or use black pepper instead. Cause the packed ground white pepper stinks. And makes the whole thing stink. In my humble opinion.

I think I would substitute anchovies for salt fish. I love the flat bottom wok! I had one like it for years and wore it out.:)

This looks great but I highly doubt if there's any flavor from this dish, I guess this is best served with some type of sauce or meat with sauce.
