I've upcoming content on Data Modeling soon; Designing Data Intensive Applications is an excellent book. However, you won't need that level of detail only for the purpose of clearing the interviews, but again, it's a great book and always good to go through it and have that knowledge :)

It's a skill based market. If you can showcase skills in key areas (6 areas that I discussed), along w/ projects and speak/explain them confidently, that's all you need. It's going to be difficult, going to take time and effort but nothing worthwhile has been easy :)

Azure or Aws which is to go for Data engineering. I experienced in SQL, planned to enter the world of big data engineering..
Can choose either based on your interest - however DE on Azure is a hot cake right now, so if you have an option, go ahead w/ Azure :)
