Looks delicious. I grate the garlic into the eggs, it infuses the eggs for even taste. When done, I scramble the leftover breadcrumbs and eggs together and serve on top. Just like my Nonna . Blessings

I love eggplant, 🍆 I don’t eat scavengers, but the first thing that came to mind was that to avoid trichina worms, 🪱 that bacon needs to be cooked thoroughly. They multiply in your muscles and cause problems. Use fake bacon would be best.
