    From the Foodland website:
    2 packages frozen coconut milk (defrosted) (12 oz bag)
    8 ounces granulated sugar
    1 drop lemon extract
    3 cups water
    4 ounces cornstarch

    The guy asked some kind of stupid questions. And the woman is bad enough to talk about having him put a steaming hot dish made with coconut milk covered with Saran Wrap directly into the refrigerator! I made Haupia commercial for years. I’ve made it with homemade fresh coconut milk, frozen coconut milk and can coconut milk. No one I repeat no has ever told me or complained or claimed that the coconut milk wasn’t fresh ever! I’ve made Haupia for Kamehameha schools Akahi dinning Hall, Kamehameha’s annual alumni banquet. So don’t be fooled by these two! Haupia is simple as pudding! Oh yeah it is coconut pudding. And remember to lightly oil the pan with coconut oil. And don’t cover it with Saran Wrap! And please set it aside to cool off before placing it in the refrigerator! Before serving run a knife around the sides of the pan to release the Haupia from the pan. Then place a cutting board over the pan and invert the pan with the board. The Haupia will now be upside down and perfectly shaped and smooth. Now you can slice it and serve.

      thank you for this comment! I was going to say the same thing! I've notice this guy on this channel is lying on how to make these dishes! he's not being honest on ANYTHING he does with the dish he makes on YT! I watched one episode of him and some news reporters at a FOODLAND location and I had the feeling that he wanted to conceal some ingredients he actually use and I also have a feeling that he DOES NOT WANT to reveal the "REAL" INGREDIENTS, rather he adds other things! I find this GUY a FAKE and he seems ARROGANT!

      Patrick, sounds like you are the go to expert on haupia. When the mixture starts to thicken how much longer should it be stirred? I tried making a small batch and it thickened so fast I thought it would burn so I poured it out quickly. It resulted in pudding consistency, could only scoop it, and did not have the firmness and shine. Help!

      Just enough to liquidate the sugar and cornstarch so it mixes with coconut milk

    I know per the description, she's a chef too, but with her demeanor, I keep expecting her to answer him "yes, Chef!" after most of his questions. Would that be a guest chef's etiquette to take the back burner on another Chef's show? Or does he just exude more confidence than her (or is more used to camera presence)?

      He does most of the Foodland recipes and i would say she is a guest. He definitely has much more experience in front of the camera and he is asking questions of things he knows the public will be wanting to know.
