Yes I've seen this technique but it seems wasteful as so much flesh is torn away. I'm lucky to even catch flathead so when I do land one, I have to maximise the flesh to get a feed for the family.

I will give a fillet knife a go soon, I just need to research a quality blade and then catch more fish to get used to it lol
