New Mexico is a special and beautiful place. The food, the culture, the history, the natural landscape and geology are definitely enchanting! I see why it's the Land of Enchantment! Santa Fe is definitely one of the coolest cities anywhere. Can't wait to go back for a visit! My favorite food was definitely the Carne adovada stuffed sopapilla Christmas, it's like heaven on a plate!

God, can Cliff PLEASE do a Native American cooking episode series! I never see Native American cuisine anywhere and would love to learn some recipes! Or at the very least working with Native American chefs and learning/sharing a thing or two about their cuisine

I love how beautiful NM is, I love that you have almost every climate, I love how open it is, and THE FOOD IS FANTASTIC. I'm like you, I know I am moving, but I'm really trying to collect recipes before I'm out, because damn. I've been all over the west and all over the south, but there is nothing as good as Mexican/ New Mexican/ Native American food, period. It's delicious, but it freaking tastes just like home, so. Gotta get that collection! :)

I'm from New Mexico and is makes me so sad that our food and culture isn't more popular. Especially the food, it's not the healthiest but it's a rare treat that is SO good!
"healthy" is a subjective term but not accurate. I have many ancestors that lived beyond 100 yo. Some died early from Smoking and Drinking or accidents or wars but for the most part they cooked with lard and did not think about the "health" aspect. I think Longevity is programmed in the genes. From birth you are either programmed to live to be 100 or 60 but diseases and traumativ life events the lifespan is shortened. I am 73 yo and now know why my freinds and relatives are all dead and I am not. Drugs, Alcohol, bad life choices that I never made. They should all be alive today if they would have chosen a different lifestyle, but diet was no a factor in their health.

I love the food of Santa Fe. Cliff is right. It doesn't taste the same elsewhere. I love both sauces and always ask for both on whatever I am eating when I get the opportunity to stop through. Cliff, like I saw in another comment, please do some Native, true American episodes! Very happy to see Sheldon again. I am a big Cliff, Sheldon, and Lucas fan.! Keep up the great work!
Great video!! Howdy from Artesia, New Mexico!! You mentioned green chile from Hatch, NM which is in the Mesilla Valley in southwest NM. You hit the nail on the head there, but I would also like to mention that the chile in the Pecos Valley in Southeast NM is equally as good. Just wanted to throw that out there, and again Great video!! Thanks for sharing New Mexico culture
Hatch is overrated. Pecos Valley all day. The heat and taste is much better.

I once time ate at a Japanese place in Albuquerque, they, of course, had green chili apart of their sushi and some other stuff, a really strange mix of Far Eastern and Southwestern foods.
All restaurants eventually succumb to the hot and beguiling green chile.

If you want authentic Indigenous food made by local Indigenous people, check out Jemez Feast or drive up to the Four Corners area and checkout the Saturday Shiprock flea market.
Neeshjizhii, mutton (& dumpling) stew, blue corn mush, chiilchin, fry bread, roasted green chile, and more is pretty much almost always available.
Also, most places that are great are along the highway. Most people having to commute a long distance to go to work will stop along the highway for breakfast and coffee (mostly always black), instead of waiting at a nationwide fastfood chain.
Also, majority of these places won't be found on Google Maps.

My hope for this cuisine? Replace the Iceberg Lettuce with Cilantro, Parsley, Romaine, or Spinach.
When I was growing up in the 1950's we called the "Breakfast Burrito" just BURRITO. The Viejitos told me what they and their grandparents, etc would eat going back to the 1800's passed on through the generations here in New Mexico and from 500 years in the Americas centered around Frijoles, Corn or Flour Tortillas with Chile added. Sometimes meat (Beef, Goat, Mutton, Elk, etc) would occassionally be added. When My mother would go to elementary school (kids almost never went passed the 5th to 8th grade) the parents would smear lard over a flour tortilla, wrap it in a hankerchief (which doubled as a "snot" rag), place it in the back pocket and eat it for lunch because schools had no lunchrooms back then. New Mexico and central Mexico are the only places where CHILE is spelled correctly, Texas evolved the Chili spelling in the 1800's. Records in the ArchDiocese of Santa Fe dating to early 1600's has the spelling "Chile" a Nahuatl (Aztec) origin. Native Mexican edibles terms ended with the "e" where as tangible items ended with "i". New Mexico: Chile, Posole, Tamale, Punche, Agave, Frijole, Gisantes. NM Spanish words: Biscochito, Empanada, Arroz, Lechuga. NM Indian: Chaqueque, Pecos. NM Moor: Alverjones, Alondiga Everthing that uses the "El".

I live in Albuquerque. I wouldn't say a breakfast burrito is smothered-- you can't eat that on the go. But whatever, man. :-) I do love the food here.
In a totally non-local food plug, I really dig a new place on Eubank that I hope survives the pandemic. It's called Firebird, and they serve Nashville-style Hot Fried Chicken.
I lived in Denver for 5 years. I can tell you that driving down Santa Fe or Kalamath in the fall was like a mild pepper spray smoke cloud experience. It smells great, but I think some of the volatile compounds get into the air and make my eyes water. The flavor of the chili is delicious, but it can be quite spicy depending on where you go. El Taco De Mexico on Santa Fe is my favorite. It used to be cash only, not sure if they use Square or other credit devices nowadays. Well worth having a meal there.

This guy is correct about green chile stew being NM Robitussen. If I felt a scratchy throat coming on, Frontier Restaurant in Albuquerque for a bowl and a tortilla. The later in the day, the hotter the chile was. Burn it right out of you.

@@zapatavive8957 New Mexico was roughly explored and settled at the same time as Chihuahua was, by much of the same people. Since flour tortillas originated in Northern New Spain in the 1500s, the same time that was happening, if breakfast burritos were invented at the same time, it isn't a stretch to say they were invented here since we were part of the same country and set of people at the time.
Nah Bro I lived in New Mexico for over 40 years, I still consider it my home but tortillas were around for hundreds of years and people have been putting food in them in essence making burritos, no way can any lay claim to being the first.. I am over 70 and I have eaten them since my earliest memories in n Phoenix

I was born in Santa Fe, grew up in Cerrillos. In the 70's I knew the location of every business from memory, no address needed.
I knew everyone's name and who their parents were; everyone and everything was 'laid back' easy going. You could do business with a handshake.
I go back to Santa Fe now and it's unrecognizable, the people I knew as 'native' New Mexicans are gone, replaced by people who came from somewhere else and turned Santa Fe into a cheap shell of what it used to be. Drugs and crime proliferate there like never before.
Don't even get me started on Albuquerque; if I could only use one word to describe Alb. that word would be 'Cesspool'......

Santa Fe is a little on the pretentious side (but beautiful), but Albuquerque is an amazing city. You can find lots of pretentious wealthy towns throughout America, and maybe those towns have an objectively high quality of life--but something is ruined when enough Phd's and old hippies who sold out move into a place. But if you want to be in a place that is just nice and friendly where you can feel at ease and get some sunshine, most of the normal towns in New Mexico are a really great place. I hope that they stay normal and chill because too much of America's great places have been ruined.

"... what makes it great, also limits it." SO true! There are many things that are similar. But people who know NM green chile can tell (and are usually disappointed by) the difference when it is not authentically local NM ingredients and preparation. There's simply nothing like it.

As a native New Mexican..... I’m not to sure I believe we invited the breakfast burrito.........?
Actually it is more complicated than that. "Burrito" Flour Tortilla with whatever you want to put into it rolled up originated in the mideast. Wheat was first cultivated in the Tigris/Euphrates river valleys and spread to warm climates from Morroco, Egypt, Israel, Persia, etc. The Unleavened bread of the Jews is a tortilla. They still make "tortillas" in Egypt and other North Aftican Countries and also Greece. The Flour Tortilla arrived in Mexico after the Cortez counquest but did not grow well in the humid tropical climate of Southern Mexico but thrived in New Mexico with the Onate Colonist in 1598. The Corn Tortilla was here in New Mexico for over 20,000 years and the Pueblo Indians would mix the Corn mash from the Metate with Elk milk and toss it on a hot rock, then roll it up to eat with Beans (frijoles) that was cooked in a depression of a large rock with water in it. They would place hot stones that were in a fire into the bean water to boil the them. Add salt that came from the Salinas District east of the Sandias and maybe with Buffalo jerkey that was also placed in the hot water to soften it and roll it into a "Burrito". Sopapillas were brought to New Mexico in 1598 by the Griego family that originated in Candia, Crete. Juan Griego (Not his real greek name) was a soldier with Onate. The pita breads of Greece are Sopapillas. The Spanish Bunuelos (Navajo Fry Bread) are originally from Egypt.

All of northern New Mexico gets a lot of snow. It’s snows fairly often every winter in any city north of Santa Fe, even in the southern part is snows.

Cool fact. Every chile pepper in the world originated from Central America. Always thought peppers from other countries were indigenous to that area but seems that the Spaniards and other visitors took the pepper from Mesoamerica, planted them elsewhere and caught on almost everywhere. Amazing.
