It's probably the airy Brussels type. Usually when they make those korean filled street waffles they don't have the thicker dough/batter or pearl sugar that are iconic in Liege waffles.

those tacos at the beginning don't look NEARLY as red enough to be real birria tacos. usually the tortillas are fryed in the grease made from cooking the meat and they get a beautiful orange-red color. seems like they had the right idea though
surprised doobys restaurant is doing well despite how horrible and hypocritical of a person she is on top of being a straight up liar. Her whole restaurant saga was the most god awful thing ranging from violating her contract and trying to sue and make the landlord foot the bill for unapproved changes to slandering the landlord as well when it was fully her fault. Shes just a horrible person overall.
