Koobideh Kabob (کباب کوبیده) is one of the most popular and famous kababs that you can find on the streets of Iran. Traditionally, this heavenly Kebab is grilled over a red-hot charcoal grill. Koobideh Kabab is the juiciest Kabab, with fantastic taste and flyover of ground meat kabobs ever. Not only can you find this kebab in any high-end and fancy restaurant and club in Iran, but you can also look for it in any little shack and café, all over the cities, and any recreation park. Or just by following you’re your nose in search of the source of this most heavenly aroma that fills the streets or any indoor bazaar. This heavenly kabob uses minimal ingredients, ground lamb or ground beef, or a combination of the two, with onions, salt, and pepper.
These are the epitome of perfection when it comes to grilling Koobideh Kabab. This heavenly Kabob is served over saffron rice or freshly baked flat bread. Lavash Ingredients:
6 fl oz lukewarm water
½ oz yeast
¼ oz sugar
16 oz flour
¼ oz salt
2 oz yogurt
1 oz olive oil
Koobideh Ingredients:
16 oz onions
1 tbsp salt or to taste
1 tsp black pepper or to taste
1.5 tbsp bread crumbs
3 lb 80% lean ground beef
Onion Salad Ingredients:
1 large red onion
2 oz Italian parsley
2 pinches of sea salt or to taste
1 pinch of black pepper or to taste
2 pinches of sumac or to taste
1 lime (juice of one lime) or to taste
1 fl oz olive oil or to taste

عالی بود مرسی من هر وقت درست میکنم میریزه 🤫
مونا خانم این ایرادی نداره. کبابهای من هم اوایل میریخت. حالا بهتون میگم که چه کار کنید:
1. گوشتتون باید حداقل 20% و حداکثر 23% چربی داشته باشه
2. اگر میتونید گوشتتون رو دو بار چرخ کنید
3. همیشه ضریب گوشت به پیاز 3X1
4. همیشه مقداری breadcrumbs به گوشت اضافه کنید که آب پیاز رو به خودش بگیره
5. گوشت رو خوب هم بزنید که مثل مادۀ چسبناکی بشه و به دستتون بچسبه
6.همیشه مطمعأ شید که گوشت به خوبی به سیخ چسبیده مخصوصأ اول وانتهای گوشت
7. اگر امکانش براتون هست بعد از سیخ کردن گوشت کبابها رو در یخچال بگزارید
این کارها رو انجام بدید کوبیدۀ خوبی خواهد شد

البته وزن گوشت هر سیخ بستگی به خودتون داره. من به خاطر این ویدیو وزن گوشت هر سیخ
رو زیاد گرفتم ولی بهترین اندازه به نظر من باید بین 150 گرم تا 175 گرم باشه
از 3 پاند گوشت و1 پاند پیاز حدودأ 12 سیخ کباب

The most authentic Koobideh is the one with: ground lamb, onion pulp, salt, baking soda, and black pepper. But, not many people like lamb and this is the reason I use ground beef. At the same time I add the onion juice to have juicer kebob. And add very small amount of breadcrumbs to observe the juice.
@@ChefKooroushShearan Lamb is near impossible to find in texas any heaux. and saffron cost as much as a new car.
Lamb in United States is too gamey! Than we should use beef.
I usually buy Spanish Saffron, and that is very close to Persian Saffron as they are using the same seed to grow their Saffron.
You should be able to find Spanish, ((definitely not "INDIAN" Saffron)) on Amazon.com, or if there is any Restaurant Depot near you and you are member buy if from there.
It will cost you around $43 for 30 grams
@@ChefKooroushShearan well, I've never been able to taste it, I think it's mostly for color correct me if i'm wrong. I have tried Persian restaurants from NY to CA to Texas and none of them use the real deal or they would have to charge 50 for a plate. but you are the expert.

Thanks for your support and your kind comment. As you see; no it won't fall. As long as you follow my recipe.
At the same time; if you keep the koobideh in the fridge, you will not smell the onion as you smell in other koobideh kebabs.
It looks Oregon’s weather is similar to London, one minute is sunny and the other next minute is a mystery, maybe rainy,snowy or windy 😂
There are lot of similarities and it does remind me of London. With a lot nicer Summers also we don't have the small small rain with the wind that cuts into your skin and reaches your bones. 😂 😂 😂
Chef, could you please confirm the amount of water for Lavash recipe. In the video you said 4 ounces but the lavash ingredient list in description has 6 ounces; which is correct? It looks really great and I’d like to make it and serve in a future video (with credit, of course). 🙏🏼
Yes, correct Chef Bagheri, I made a mistake and called it 4 OZ, but it was 6 OZ in the cup.
Also if you do not want to use yogurt you should add more water like 8 to 9 OZ. And if you have an old dough or sour dough use it instead.

To be honest; I do not like any sweet dishes. If you look at all my dishes, you will notice I always cook savory dishes.
What part of the beef should I get it ground? I don’t have a outdoor grill. How can I cook it in the oven?
If you have an outdoor grill you should get 80% lean beef and chuck roll.
If you are cooking it in the oven your beef has to be 93% lean
