As a Brit who was raised on fish and chips, eaten at the Magpie in Whitby, Rick Steins in Padstow, the Balancing Eel in St Ives, they had to be fried in beef dripping nothing else will do, but have to admit some of the best fish and chips I have ever eaten was in Derby , Montana whilst on a fishing trip, superb Cod and crispy chips they even had and I kid you not Newcastle Brown Ale on tap, halcyon days :)
@@barbarasanders7965 No. I’ve never heard of anyone eating Catfish in the UK. When we have fish & chips here in the UK, it’s usually either Cod, Haddock, Rock, Plaice or Pollock. Although I haven’t seen Rock served in a very long where I live.

I grew up eating catfish, it's served in ALL the restaurants around here (SE US), and we often host "fish frys" where hundreds of pounds of catfish are prepared and served. Of course, only very rarely is catfish cooked like this. BY FAR the more common way is to use a dry batter of seasoned cornmeal, deep fried in oil. IMO, properly harvested and prepared catfish is THE BEST freshwater fish in the world.

@@balbarith45 that's a funny one really because chips from the chip shop are wrapped in newspaper before you get to eat them, so they do get a little bit soggy at the bottom of the pile! Still delicious though
@@balbarith45 I think the vinegar plays a part too. The bigger chips soak up more vinegar (and salt) so become......not crispy but not soggy either if that makes sense?
As a Nova Scotia fisherman who eats fish 4 times a week for dinner. Those are quality fish and chips. Very nice to see. Come up here Kent we have giant tuna and shark's and smallmouth!

I've tried at least 5 "fish n chips" recipes on UA-cam. While CK has been my favorite YT chef for years, I really thought his take on this classic recipe left a bit to be desired. Compared to the others, it was just too simple. No eggs. No marinading. No freezing everything for hours. No 5-6-7-20 ingredients in 3 different batters, dredges, and mixes. Nope. Just a couple ingredients, a cheap light beer, and some technique. Well....45 minutes ago I decided to give Cowboy Kent's method a try (it's actually my second time, but the fish I used the first time was sub-standard - really thin talapia if you're interested), and I just finished the last of the 4 filets I cooked for myself. Fat and happy, I'm now certain I can STOP looking for the best fish n chips method. Thanks to Kent and Shan and Beag I've found it!!

I've sampled fish and chips from all over England. As far north as Annan, to as south as Winchester. Kent's version doesn't come anywhere close to the many different regional variations. But, that's not a bad thing. He does what he does with the spices he enjoys. I guessed you being in the south because the South has some of the worst fish and chips in England. Maybe wherever you have had similar to Kent's, that wasn't a true fish and chip shop. You know, like when Asians set up pizzerias. They ain't bad. They're just not authentic. Have a great evening.
If you & Shannon ever come up to Wisconsin you need to go to a restaurant & try a Fish Fry. Almost every restaurant in Wisconsin has a Fish Fry every Friday (not just during Lent). In fact, Milwaukee Journal Sentinel puts a special section in the paper at the start of Lent to tell everyone where the best Fish Fry's are. The best ones have potato pancakes w/the fish. The Friday Fish Fry is a state tradition. Guess you would have to check the restaurant for social distancing/seating.

When I was in the Navy we pulled into Portsmouth for a couple days. Fish and Chips was on my list so I stopped at what looked like a local Fish & Chips shop and when I ordered my Fish & Chips he asked "what kind of fish mate?" I had no idea there was a choice. I wound up getting Cod and it was great. I like catfish too but I need hushpuppies with my catfish. BTW, English fish and chips needs Malt Vinegar.
That looks delicious! In the uk this is one of our national dishes. Goes great with a curry sauce or mushy marrow fat peas… or even gravy on the chips. The kids love it with ketchup! And it’s always served with salt & vinegar, a slice of white buttered bread and a cup of English breakfast tea. You did this such justice! Well done Cowboy Kent! Absolutely fantastic! To anyone considering making this: DO IT!! The batter is so light and crispy. It doesn't overwhelm the fish at all. The fries are better than anything you'll order in a restaurant. I always smile when I see somebody have a go at some other countries "National Dish" and as an Englishman I'd like to thank Kent for giving this one a go - Looks like you did a damn fine job of it as well - that batter looks terrific! The chips could do with a bit better preparation, a bit thicker and cut out the black bits - but I guess you have to work with what you have (I thought potatoes were "invented" over your side of the pond). As Mentioned Mushy peas should really be on the side as well - but tartar sauce with battered fish? Each to their own I guess! With reference to the furrenor you lot did start of as englishmen after all (so I won't mention the mug of tea - beers better, just not that light stuff you get over that way! Keep up the good work and the great videos - I love 'em! Oh yes whilst your flag has the same colours they may not be the right sort of shape - but as a Veteran I can tell you - THOSE COLOURS [COLORS] DON'T RUN!

I made this last night with cod and it was just amazing. I used an IPA instead of a pilsner. I love fish and chips and it was some of the most flavorful I’ve had. I will definitely be making homemade fish and chips again. Thanks for the recipe Kent!
half 'n half of rice flour/ regular flour , dash of paprika , two eggs and 8oz. of lager beer (yes, the cheap stuff) ... whole uncut haddock , fried in Crisco ... the Hank Doktor recipe from the famous Greenwoods restaurant in Darien , NY

Absolutely fantastic! To anyone considering making this: DO IT!! The batter is so light and crispy. It doesn't overwhelm the fish at all. The fries are better than anything you'll order in a restaurant. I love that Kent and Shan share their recipes with our success in mind - watch the video, follow the recipe and it is almost foolproof! Can't wait to try the long list of recipes we've bookmarked! I always smile when I see somebody have a go at some other countries "National Dish" and as an Englishman I'd like to thank Kent for giving this one a go - Looks like you did a damn fine job of it as well - that batter looks terrific! The chips could do with a bit better preparation, a bit thicker and cut out the black bits - but I guess you have to work with what you have (I thought potatoes were "invented" over your side of the pond). As Mentioned Mushy peas should really be on the side as well - but tartar sauce with battered fish? Each to their own I guess! With reference to the furrenor you lot did start of as englishmen after all (so I won't mention the mug of tea - beers better, just not that light stuff you get over that way! Keep up the good work and the great videos - I love 'em! Oh yes whilst your flag has the same colours they may not be the right sort of shape - but as a Veteran I can tell you - THOSE COLOURS [COLORS] DON'T RUN!

I made this last night with cod and it was just amazing. I used an IPA instead of a pilsner. I love fish and chips and it was some of the most flavorful I’ve had. I will definitely be making homemade fish and chips again. Thanks for the recipe Kent!
