I invited Ba our own Gujjuben from Masterchef to come to my place and teach me Gur Papdi. And this was so nostalgic as she reminded me of my grand mother. This is not an easy recipe but Ba made it look so easy. We make Sukhdi in Ahmedabad all the time & it’s a very traditional recipe something that is not sold in markets much nowadays; but consumed by Gujarati households just about every now and then.

All you need is 1 cup jaggery, 1 cup atta and 1 cup Ghee. And some khas khas to sprinkle on top.
Ingredients :
1 cup Ghee
1 cup Wheat Flour (Gehu ka Atta)
1 cup Jaggery (Gur)
Khas Khas (optional)
Method :
Heat 1 cup Ghee in a pan
Add 1 cup Wheat Flour
Keep stirring continuously on medium heat Fry for 10-15 min until it's nice golden-brown
Add 1 cup Jaggery
Keep stirring and mix it well
Take the mixture on a greased plate
Sprinkle some Khas Khas on top
Let it set well and cut into pieces

I make golpapadi very often, for
the regular type ,my grandma used the regular flour like the one you used, i improvised for my school kids lunch box a one fourth part of rava or suji ,(fine or coarse ,any rava) to our rotli no lot , if i used bhakhri no bhabharo lot ,i used fine rava, the result is mindblowing, soft but chunky, easily breaks into hands and melts in mouth , for further nutrition,i add dry ginger powder or sunth, ganthoda powder ,kesar , elaichi, kaju badam pista powder, at times kopru cheen ,dessicated coconut powder to give indirect nuts as nutritional to the kids or people in old age ,furthur til for adding calcium ,are the common handy additions to the basic sukhadi

A question to you Meghna Ben! I saw the recipe of Kada Prasad of Golden temple by one of the chef. That recipe is similar, so how can differentiate between the methods of Shiro (Kada Prasad) and Sukhadi ?

I took measurement of 1 cup each , but it was too liquidy , and it become very hard because of jaggery .. where is the mistick
When you spread on thali it will be soft. Jaggery was to be added at last and flame to be slow or stopped. Which jaggery did u use?
I made this recipe. It has too much of ghee. Proportion should be 1cup flour and half cup ghee.
