    Came across you site by accident. A thoroughly enjoyable tutorial which was easy to follow and your technique was on show the whole time, Look forward to your next lesson. Could you post your recipe for ?Royal Icing it looked good and there are so many variations!! that it is confusing.Thank you for showing us how it should be done.

    Thanks for your tutorial - the presentation seems so simple... I love decorating cakes but sometimes I have a problem keeping the shape consistent. The angle of the hand and tip is very significant and I like the way you present this. However, I do have a question - What's the purpose of the torpedo shapes if you're covering them with all those scrolls?

      They give you more dimension when working on the edge of an actual cake.

      It does harden however you can add glycerine to the mixture which will slow down the hardening process.

    What consistency of Royal Icing are you using? I've read down the comments for a bit but can't seem to find the information. Do you use the same consistency for the barrels and the strings? Do you put glycerin in the strings? Thanks. I went to see if I could find your latest border book, but it seems they are out of print right now. Thanks for your response.

      When piping borders I use soft peak consistency for the scrolls however if I’m piping barrels or foundation pieces which will be piped on top of I tend to use slightly firmer royal icing so that it dries firm enough to support weight. I never put glycerine into the royal icing I use for string work because those lines are fragile when dried. As a rule for guidance I tend to adjust the consistency of the royal icing depending on the size of the piping tip/nozzle, the larger the aperture the firmer the icing can be the smaller the aperture the softer the consistency has to be. I hope that helped.

      Its a PME no. 13 or a No.44 if you wish a smaller rope.

      Yes but be careful of gravity, the royal icing supports its weight whereas buttercream and whipped cream do not crust therefore could move or slide.

      Soften the icing a little with some water, only a drop or two, then when you've piped a dot tap the peak down with a slightly damp paint brush, make sure the paintbrush is only damp because its it is too wet it could dissolve the centre of the polkadot.

      If you mean the piping bag i would search the internet for plastic piping bags if you are referring to the metal piping tips then search Wilton or PME
