    Found you in February of 2023. I've been on a kick of using chickpea flour more, I've done some egg cups, but never thought I could use it as a tortilla. I'm thrilled to find this out because I am allergic to corn and cannot eat corn tortillas. This looks amazing...I don't have quite all the ingredients, but I will be getting what I don't have and trying this. I cook at men's ministry retreats, this may just be on the menu next time! Blessings!!!

    Wow, this dish IS a game changer! Pure Love. I am from the SW and Hispanic. My fave thing I miss is enchiladas suizas and sour cream enchiladas And mex food in general ... So few vegan Mexican options!!! I am making this on this very weekend!! Thank you

    SCRUMPTIOUS Vegan Enchilada Suiza Bake Monson! Looks kinda like what we make herein Mexico,which we call 'Pastel Azteca" Aztec Cake, but that's made with corn tortillas, trying out the Chickpea flour tortillas as well as the chips, from a video I saw yesterday here on UA-cam.😋👍

      Yay! I actually made this for a friend the other night as well, and I was giddy at how much I loved the recipe. I actually used Beyond instead of the Soy Curls, and the flavor was a bit overpowering... I should have just stuck to the original. But it was still tasty and I loved having some leftovers. Oh! I also tried it with corn tortillas instead of the chickpea flour ones, and I found the corn flavor to be a bit overpowering as well. Again, it was still really good, but I should have known better than to mess with what had already worded so well. Haha. Thanks for letting me know!

    Looks really yummy! I made your scalloped potatoes for a crowd on Sunday ( we ate outdoors) and they were a big hit! Takes a lot longer in the oven, though. Oh, and I added sautéed mushrooms to half of it.

    I made this today. Delicious! Very easy. I changed it slightly by using salsa instead of tomato paste and my own flavourings. Substituted tofu for soya curls too. Never the less it was great!

      Thank you! I have tried a few chickpea pancake recipes. Some call for baking soda or powder. Some call for flax meal... This is just a super simple pancake that makes a great savory bread or "tortilla". If you're looking for that, this is the recipe. Also, using the blender is a pretty big help in terms of getting the texture right. Let me know how they turn out.

Like, what kind of magician do they think I am to be able to stop the machine, invert it, and unscrew the lid before the blades have stopped. What happened to require that warning?

      Thank you! I actually have a couple in there. I bought the copper sheets from Bed Bath and Beyond because you get 2 for like $10. I use one to line the bottom of the oven, and then I use the other to go on the racks as pretty much a baking sheet. I cook everything directly on it. They're also great because you can cut them to fit.

    Tofu! You can use tofu! So versital flavor with whatever, it is a sponge for flavor, you didn’t mention it so I thought I would… I love that the tortilla fits the pan perfectly! I think the title should be “ the Anniversary bake” what else could t possible be? Lovin it and the cream sauce that I thought would be runny but no it set perfectly!

    I made this tonight and it came out amazingly delicious! Thank you! Definitely adding it to my favorites! On a side note...the typed recipe calls for a 14.5oz can of green Chiles...in the video, you use a 4oz can (which is what I used). A typo perhaps?

    Soy curls disappeared from my area years ago and I didn’t know what they were called. I’m so excited to order some. I used them to make fake fried chicken.

      NOOOOOOOO! I found myself at the Lake of the Ozarks without a proper grocery store for miles, and I ended up ordering them from Amazon. If you check out my air-fried jerky video, that was filmed at that lake house using those emergency curls... Actually I think I packed a bag of curls with me in my suitcase, which I used on the first night, and I had to order more to actually shoot the video.

      Thank you! After this video, I didn't cook with Soy Curls for a long time. I have no excuse. But I just made a Teriyaki "Chicken" Bowl Salad with them a couple of weeks ago that I would highly recommend. If for no other reason than the fact that the teriyaki Soy Curls component is amazing.

      Thank you! And thanks for being here for most of my time on UA-cam. And yeah, those chickpea tortillas are so good. I've been making them a lot for tacos and sandwiches. As long as you don't overcook them, they stay really pliable. I considered making a cauliflower cream sauce instead of the cashew. I think any sauce you make that goes in the consistency of heavy cream will come out the same. It's all water-based in the end.

    I questioning myself as to why I don't use chick pea flour. Good idea. I'm planning on making this (with my own tweak, cannot do the pretend meat or the soy curls. It's a texture thing, lol I will add more mushrooms)

      Thanks for stopping by, watching, and taking the time to comment! I was really really into chickpea flour for a while. I wanted to use it for everything. It's such a cool ingredient. I get what you're saying about the texture. It's not for everyone. If you use sauteed mushrooms, I think this will be really good. Let me know how it turns out.

    what is soy curls? I've heard you say this. Is it dried soy chunks you can buy in shops?

    🤍 Hi MMT 🤚 I recently tried making a quick and easy Vegan Chilles Rellano Bake , thinking of how the Authentic dish is really particularly well prepared and delicious. I didnt have Chickpea Flour to make a batter. I want to try with that too , even though It still tasted very Good with blossomed ground Flax Seed and Baking powder ... I was missing that fluffy thick Eggy fry batter effect. I would call Your dish, Chillies Rellano Francaise Suisse ( Suizas ) Verde Chicken Bake ( V ) 💚
    I also made quick and easy one Pot assembly Suisse Verde Enchilladas. With jar Avocado Salsa ( It doesnt taste like Avocado in the dish though ) , Tahini , Zucchini and Onion filling in Corn Tortillas ... I didnt miss the Cheese in Enchilladas for the first time. 🤍🩷

      Check out Jill McKeever's vegan tamale recipe. It uses soy curl dust basically as the filling. Its super good but I added cocoa butter. Hers are oil free.

    Does anyone know what brand of chicken bullion. That does not contain sugar or sucrose?

      In this video, I use a vegan "No Chicken" flavored Better Than Bouillon. I'm pretty sure it contains sugar, though. I'm not sure of any commercial brands that don't, but honestly, I haven't really looked. Good luck on your search!

    Did you soak the cashews? I use a magic bullet too but I always end up with a weird texture, lots of small chunks. Should i do something differently?

      I did not soak them. Are you using a Magic Bullet or a Nutribullet? If you are using a Magic Bullet, you definitely want to soak them for a while. I seem to get a great texture using the Nutribullet without soaking them, though. If you're ever in doubt, just soak. Anything other than a high powered blender will give you a gritty texture if you don't.

      That's probably it. A Nutribullet is a lot more powerful than a Magic Bullet. A standard blender should work if the cashews are soaked long enough or boiled.

    I've been following your channel for a while, now. I was sort of asked/elected to create a "Vegan" dish for a couple of missionaries (based from our church to Wales, U.K.) that will be coming to our over 50 Wednesday group (Golden Heirs). She is totally vegan & he is non-dairy. So, I felt that a totally vegan yummy, such as the one you just made, would be absolutely perfect!! Anyway, I AM going to give this a try & may even get the non-vegans in our group to take a "no thank you bite"!! I'll bet they will be amazed & will be begging for more!! Just saying!! I want to make this for my office holiday potluck and share how tasty vegan food is and we vegans are definitely not missing on delicious foods 🌱🌱🌱😃

      Thank you! I actually reheated some last night... I have to admit that much of the creaminess is lost after it cools and then reheats. It still tasted good, but this dish is definitely at its peak shortly after coming out of the oven. It doesn't take long to cook, would you be able to bake it at the office? Or bake it off before going into work, covering it with foil or a lid, and then serving it at room temp?

      I mean, do you. I'm only presenting the blueprint.... Have you tried freezing them? That might really help to take some of the heat out.
