    Raw Pack Venison
    -Cube meat into equal proportions
    -Add to prepared jars
    -Add 1 tsp canning salt to each quart
    -put on lids and rings
    -pressure can for 90 minutes
    -Store in dark cool location

    I ain't too proud to eat me some leftover fried deer tenderloin for breakfast, dinner and supper, plus any in between snacking, until it's gone.
    Slap it on a biscuit for breakfast, make a sandwich come dinner time, and make it an entree all over again for supper.
    Of course, adding some fried taters with onions, some sawmill gravy, good country biscuits made with buttermilk, and some sliced tomatoes works for either one of them meals, or all.
    By the way, them's oxygen absorbers in them packs of jerky.

    We owned a deer processing business for over a decade. We throw the silver skin on the back straps and hind legs (what we cut for steaks) into burger. It’s super healthy. Has a lot of collagen like the thick lining in an egg shell. All glands and “dirty” meat (hairy stuck to it) gets packaged for dog and chicken feed.

    I was blessed with some deer meat. I felt like I won the lottery! I canned some up like you did for quick meals. You just can't beat it.

    You brought a lot of good memories back of my husband and me canning and making deer jurky. Now that we are older he can't walk the hills like he used to. It is good to see young people continuing on with the old ways !

    I crock pot deer roast with bullion and dehydrated onion or onion soup mix. After shredding I mix with bbq spice and sauce or taco seasoning or just brown gravy. Very versatile and I don't have to make up my mind until after the meat cooks.

    I have old butchery knives from the family. My great grandfather was a partner in a butcher shop and I grabbed the knives when my father passed away. He was in the business around 1900.

    The one good thing about doing your jerky that dry is it's very easy to make pemmican out of it. I just found y'all's Channel today so I thought I'd faller ye fer a bit and check out some of y'all's other videos. So far so good. I just had to come back and add this I ain't making fun of y'all I talked the same way y'all doing is there sometimes it don't come out printing the way I talk, just like that last word there should have been tawk.

    Not going to lie. I have lived every video ya"ll put out but you broke my heart on calling backstrap tenderloin (2 separate cuts) and canning the backstrap. However i understand to each his own and theres always another way and i love to learn.
    Now i have to agree 100% with you on the old hickory knives the old ones are the best theres definitely a quality difference between the newer ones and the ones made upto 1970. I have several older ones. Also i found a site called old steel knife site. Where you can order old knives.

    I have even corned deer, just like beef, and canned it. Delicious!! We always run our sliced meat through a tenderizer, and it's like cubed steak. And, we always grind some to mix with ground beef to stretch it. Have you ever tried making jerky with ground deer? Just press it out of a jerky gun into your trays. That's good, too.

      I haven’t tried corned but I bet it’s delicious. I like to grind bacon in with mine for the fat content and I also like the jerky gun style.

    I just love venison.. but no deer around here..
    It's very raw l have it.. a luxury for me..
    Just love the knowing that you guys have..
    People need to get back to nature and grew, kill and work their own little piece of heaven...
    It's not more expensive then houses in big towns..
    And then your living costs are very little..

    The dear meat looks great and y'all really know your stuff. We get ours from the deer processor out in the country (do you have anything someone didn't come pick up?) Keeps it legal. We live in Elmore county Alabama.
    Anyway, just wanted to wish your family a Happy Holiday. Without doubt y'all be eating some good food.
    Oh, I've been searching for a local farmer in our area for a while. Just looking for cleaned chickens and eggs, but it's been hard. I'm not giving up. If you know of a website that list local farmers please let us know. I'm betting the kind of oldschool farmer I'm looking for "don't know nutten bout dim puters" 😊

    Haven’t gotten a deer for a few years, but tenderloin I usually did a butterfly cut. Always the first cut to hit the frying pan :)

    That meat looked beautiful in the jars. I haven't had venison since 2000. Had an accident at work and hadn't been able to go hunting. Which is a real bummer cause I really loved to hunt.

    that silver skin, fleshed and dried becomes sinew. "Indian thread". Just soak it in water to rehydrate and seperate into threads. it is very tough and nearly unbreakable.

    I canned venison yesterday and chopped up the scraps and canned them for dog food. Your jerky looked really good, I have a dehydrator so I need to see what happens with that next time.

    I use my canned venison in tacos/ fajitas and love it. Also throw some canned caramelized onions and veggies in it for a quick stir fry.
    I dehydrate the “ scraps” for dog treats.
    We eat deer instead of beef.
    Megan do y’all grind any for burger? I have not tried canning ground meat yet. Any tips?

    Tenderloin runs on the inside of the deer along the backbone they call that back strap we used to make it into chops either boneless chops or bone in chops and are they ever good and yeah get rid of all that skin that's called sinew and get rid of all the deer fat because it makes it deer meat bitter and it kind of sticks to your lips fill them And the sinew is what plugged up meat grinders badly That sinu that you're taking off if you noticed an Indian's drums that they make that's what they used to make the drum as a string the usinu for a lot of stuff just cut it up and strips dry it and then when you go to use it you just soak it and then use it and when it dries it shrinks nice and tight and you're never ever be able to break it tough stuff I have a drum that I made at one of the Indian programs that we did because my wife is Indian In the drum I used my dear hide for my skin on my drums and the families drums

    I live in west Tennessee wonder if y’all have any problem with CWD. Because I have read a lot about it and they said not to eat the meat

      Where/ how do you get your deer checked for CWD? We are in KY. & are told to “watch for strange behavior. I can deer the same way, & yes deer tacos are yummy!

    Ive seen several of your videos and each one you two do not know how to use a knife. You are not suppose to cut towards yourself or others. I have seen you Andrew cut towards your wife and towards yourself. Same with your wife she cuts towards herself. Learn to use a knife before you cut or stab one another.
