@@thallesrigobello Wrong, hamburgers were invented at Louis' Lunch in New Haven, Connecticut. The name comes from the form of meat used hamburger which was called this because it was at one point believed that finely chopped/ground meat also known as mince meat in places originated in Hamburg German, however there is no evidence to back this up. The name hamburger still persists within the United Stated for ground meat, most commonly ground beef.

Guga, that sharing of your process of making your smash burger and Gui sharing his methods as well absolutely compliments and reflects the teachings of a career butcher/meat cutter/retail meat specialist/cook extraordinaire and also demonstrates very well the passion of a man that I learned from myself. He has teachings he shares that he learned from other artists he met on his journey throughout his travels.
Thank you for this episode, and thank you for sharing your techniques with us. We also understood that blending meat processes are special and something that we like to keep close to the heart as well 😊. We've switched to using wagyu fat for all of our baking at home; loaf bread, buns, pies, cakes, etc. and it's gone to a whole new level.
I made chocolate chip cookies, 3 batches; one with butter, one with coconut oil, and one with wagyu tallow, and the batch with wagyu fat was the flavor king. Now, if you want to make something different that's really good, the coconut oil cookies are great, but the tallow added a rich, savory depth that added a contrast to the chocolate chips. 👍

The rice buns on that Beef Yakiniku Rice Burger really makes the difference, primarily because it's Japanese rice. Here in the Philippines, I'm not quite sure if the MOS Burger branches use Japanese rice or Filipino rice, because back when I tried one, they provided me spoon and fork, and the rice buns break apart easily.
Anyway, when I go to Japan again, Western Japan is my next target, and Gui's Burger is definitely a must-try for me.
