  • From plant & peppers to fermented hot sauce, I show how to make fermented hot pepper sauce using tabasco peppers, cayenne peppers, salt, vinegar, & time.
    Ingredients:
    A batch of garden grown hot peppers (Tabasco preferred)
    2-3% salt by weight
    White wine vinegar to taste

      Oh, accomplished indeed!
      I've yet to make the fermented hot sauce but I've made lacto-fermented jalapeños and will definitely recommend trying that out. It takes the top off of the heat and makes their flavour really well balanced :)

      @@chililovers5297 It ends when you want it to end. This is why vinegar is added, it stops the fermentation. The usual minimums are 2-4 weeks, you can go much longer, if you choose to, though.

    I was so impressed with how this turned out last time...this year I planted 100 Tabasco plants and they are producing like crazy...not changing a thing this time, thanks again for the best recipe!

    Save the sludge from the straining, dehydrate, grind, and you'll have some tasty spice mix to sprinkle on your food.

      I will have to try that, I have been throwing away a whole lot of the sludge as you call it, do you grind it after dehydration in a coffee or spice grinder?

      I do exactly that...!
      1. Line the shelves of food dehydrator with waxed paper...
      2. Spread the leftover pepper skin-seed "mush" out as thin as you can...~1/16"...
      3. Within hours you'll have a fully dried "crusty mix"...
      4. Put the dried mix through a food processor...
      5. La voila! Dried hot pepper flakes...perfecto!

    Grest Video! I live in Canada (in Montreal), and before first freeze (depends on seasons, generally here about mid-end October), I bring my Tabasco Plants inside. They kind of hibernate a little bit, keep producing fruits (but production slows down a little bit), and on next spring after the last frost I bring them outside again. I have plants that have more than 2 years and they still strong, they're about 5ft height, and on 2nd year they even bring more fruits than the first year! During Winter Time it's important to leave them in a place where there are plenty of sunlight. These plants needs sun and water every 2-3 days.

    I use Tabasco on EVERYTHING! So decided I needed to make my own due to cost. I just picked all of my pepper yesterday and got 5lbs of Jalapenos and Serrano del Sol. I will be getting them all cut this evening.

    Great video! I’ve just finished a couple of batches including my first ever green pepper hot sauce. I noticed you used a lid and I’ve seen other people use them. When I ferment my sauce I just use a piece of cheese cloth secured with a rubber band that way I’ve avoided any disasters. Thanks sharing your techniques!

    unless you like tabasco from the fridge, you dont need to put it in the fridge if its fermented as the fermentation drops the ph low enough to be shelf stable and the addition of vinegar drops the ph even lower for even more shelf stability..... I find the flavor of fermented hot sauces is much better when stored at room temp....

      piri piri sauce is a portuguese medieval sauce...thy used it for the first time, fermentation is simple but you have to know wht yor doing, and in the end join vinegar,, vinegar is good to make hot sauce be more efficient....but if you do with olive oil, dam will blast your mouth and ass.

    I started mine today from tabasco peppers I've had in the freezer for about 5 years. This was supposed to be my wife's project but she never got started. Then, the peppers ended up in the bottom of the chest freezer and weren't found until the compressor went bad and I had to buy a new freezer. Becauses the peppers had been frozen so long, I added some liquid from a batch of sauerkrat I had fermenting. Hope it turns out as good as my beer, wine, mead, cider, bread and kraut. Ferment on!

    I have been a cook and a chef for almost 40 years with tons of baking experience (I have a starter in my fridge right now) and I would have NEVER thought of using the hooch from my starter to kickstart a ferment on a pepper sauce. What a great idea! I will definitely try it with my next batch. I just started a batch of thai-lapeno sauce about 4 days ago in a 3% brine and they are just starting to bubble a little. I love Tabasco so my next batch will definitely be this recipe. Nice to see that this old dog can still learn some new tricks. Thanks!

      Chef, I don't have any, starter. So I did a quick check. Store bought kombucha or yogurt will work as a lacto starter. Just check the label. It will say something about the contents being "Active". I hope that's helpful.

    Of all the recipes on YT for making home made tabasco sauce, this one is the correct one. Others have you add vinegar before it ferments (which inhibits fermentation). And, it's a good idea to add vinegar at the end of fermentation and let the vinegar sit on the lees for a week or so (you get more sauce that way). I made a batch today and would also mention to wear gloves and be careful about transferring the juice to other objects (knife handles, faucets). Even the fumes can be irritating.
    I add the salt before processing to make sure it's mixed well and add a couple of extra dashes on top after I put it in the jar to make sure the salt content at the air interface is high (the Tabasco folks do this as well--theirs has a salt crust on top). But follow this recipe and you'll end up with a version very close to the real thing (slightly fruitier/fresher taste since you will not be aging it in wine barrels for three years...)

      salt also inhibits bacterial and fungal growth, maybe more so than vinegar... i think it might a good idea to lower the pH a bit right at the beginning, to favor lactophile bacterias(ie ones that can thrive in an acid environment whereas others can not). this was my first season trying a fermented sauce, and i had results i am happy with. also, it is worth considering that Tabasco probably adds a lot of vinegar to their product in order to stretch it. i just tried my sauce with the storebought tabasco, and i liked mine better....it has noticeably less vinegar.

      I’m fermenting some mixed Serrano and banana peppers right now, but I’ve upgraded to a lid with an airlock to keep mold at bay. In the past, I’ve had to scrape mold off the top. Now, no mold.

    I'm from southern AZ and am curious to try this w/ some local peppers! I lived in Illinois for a while and am jealous of the produce. I thought the peppers would suck but I was pleasantly mistaken!

      Grow your own. Peppers are extremely easy and fun to grow. You can do it. You can order seedlings or seeds. I suggest seedlings. I live in Louisiana, so I grow a ton of different peppers. We just started tobasco peppers this year and wow...what a haul...you can do it!

    Just started my first batch of hot sauce. I’m in a northern climate too, and didn’t get very many ripe tabascos, so I used a bunch of green ones as well, and some chilis and jalapeños. Can’t wait to see how it turns out. Didn’t add any ferment starter, as they were all fresh.

    Never really liked tabasco pepper type, but I do like the chipotle version. I also like Frank's and any Louisiana cayenne version.

      The issue with Tabasco sauce we are all familiar with is that it doesn't contain much of the actual tabasco pepper (a C. Frutescens pepper which has a nice flavor) and is drowned out with a really high amount of vinegar as most store bought hot sauces are. Try and grow the actual C. Frutescens "Tabasco' pepper and you will likely change your mind ^_^
