Ingredients:
Pot of Canola Oil (careful not to fill it all the way up! halfway is good )
For the Seafood:
2 lbs. Tiger Prawns (or 21-25 size Shrimp) or large shrimp ( hunny you can use whatever you can afford!! )
2 lbs. Whitefish or Catfish or fish of choice
1 bottle of Mustard ( you don't taste the mustard it just helps with the batter and ensure the seafood stays nice and tender)
2 lbs. Lobster Meat (or meat from the tail)
For Loaded Okra:
1 lb. Fresh Okra
1 pack Bacon ( cooked and chopped)
1 Qt. Buttermilk
For the Batter:
4 tbsp Seasoning ( think of a good mixture: Paprika, Cayenne, Garlic, Onion, salt, Black pepper etc.)
1 Bag of Fish Fry Mix (New Orlean Style)
1 Bag of Fish Fry Mix (Breaded Mix)
Juke-Joint Honey Hot Sauce:
½ Cup Hot Sauce
½ Cup Honey ( mix together )
For the Homemade Ranch:
1 cup Mayonnaise
½ cup Sour Cream
2 tsp Garlic (Minced or garlic powder
1 tsp Onion Powder or more to taste
2 tbs dried dill or more to taste
2 tbsp Parsley (dried)
3 tbsp Blackening Seasoning
Homemade Tarter sauce
1/2 cup mayo
1 tsp salt ( adjust as needed)
garlic and onion powder to taste
1 tsp black pepper ( adjust as needed)
2 tbs sugar
fresh lemon juice ( about half lemon)
1/4 cup sour cream
4 tbs sweet relish ( or more to taste )
few dashes of hot sauce if you want a little kick.
Mix all ingredients together in a bowl, cover it, and set inside the fridge until you need it
* you can also substitute the seasoning for a store bought ranch packet*
Method:
For the Batter:
Combine your Bags together well and ensure you’ve seasoned them!
Mix all your ingredients together until well combined and set aside in the fridge.
For the Juke Joint Hot Honey Sauce:
Mix them all together in a bowl!
For the Okra:
Wash and dry the okra. Cut the top and bottom off each and make a vertical cut. Pour some buttermilk over the sliced Okra (*You can let this sit for an about an hour). Season well. Dip the Okra into your Batter and fry off in your pot of hot Canola Oil. When they start rising to the top, you know they’re done. load it up with homemade ranch and toppings!
For the Seafood:
In a bowl coat your Catfish with Mustard, then coat them in your Batter mixture. Repeat this step with your Prawns and Lobster tails and fry them off until good and crispy!
Assemble:
Have fun putting it altogether! Make levels of your seafood and garnish with Lemon halves, coleslaw, pickles, slices of white bread, Parsley (Food Grass!), and of course your Homemade Blackened Ranch and Bacon! Ensure you’ve got a beautiful medley of seafood!
