I had heard my whole life how bad Jack Crevalle was until I ate it. I had my son in law keep one for me and immediately bleed it. The meat was red just like your's but it tasted great. Next time I went out I brought 6 small ones backed and cooked them for my office staff and they all loved them. I'm with you, if that's what you catch, there is no reason not to eat them.

The one I cooked up was a bit bigger than yours, so it looks like they are still pretty tasty as they get big. I cooked mine teriyaki style, it almost tasted like hibachi chicken! I love eating Jack Crevalle and we have lots of them here in Pohnpei, Micronesia. From the smallest one to the large one's. This is my favorite fish beside the bluefin tuna. You can eat it raw, boil it, or bake it, or just do any cooking; it is still good. Thank you for showing this video clip. Enjoy your trip and hope you get Jack Crevalle.

I got a big one. He was cleaned pretty quick. We coated him with some olive oil, butter, lemon juice, and tony's. Then I grilled him medium/rare. I figured it looked like a beef steak, so that is about how I cooked it. It was really good that way.

Took home three about a month ago. I scored them and rubbed with olive oil, garlic, parsley, and pepper and smoked over pecan wood. Some of the best tasting fish Ive eaten. Dont know why they get a bad rep!

He went on to say the meat has more of a steak texture and should be prepared as such. He prepared and cooked the cubes like steak and then served to random customers at the restaurant. They all thought it was steak instead of a saltwater fish. I'm gonna try the same on a big Jack when they start running soon.

I bought a Penn Pursuit 2 last year in the 4000 size... i was wondering if you would know what would be a good rod to pair with it for fishing for spanish mackerel, trout, redfish and snook for $50 or less. I think we are taught at a young age what to eat and what not to eat, but if you look around the world at the fish people eat and here in the states we have always been told what's edible and what's not. I'm from Tennessee And I make my way down to Florida's forgotten coast in the spring and summer to fish, and there is one of the AJ's we catch that we have been "told" isn't good to eat so we always throw them back, and hard head catfish are supposed to be bad, we don't keep them because we have catfish here, but there's a couple to try. keep it up!
subbed, thanks for the great content. just a suggestion...cut the fish at the gills and bleed it as soon as you catch and it will taste much better. Second, when you drop the fish on to the pan, lay it down away from you so you dont splash yourself with oil. Tight lines brother!
Grill that Jack on the grill with some Monteral Steak seasoning... and do not forget to bleed it when you catch it and take that dark meat center blood line out. That will make it sooo much better. ... Also great for smoked fish dip too. Or for a nice deep fried fish bite. The Meat stays nice and firm. The Big 12-35lbers' make a great Steak on the grill. Just bleed it , then soak the filet in cold water over night in a gallon zip-lock..or marinade etc etc. . But the grilling is an excellent way. Also , it's really high in Omega 3's. I also hate that people give it such a bad Rep, It's prolific, Fight's Like all Get-Out, and to me, is a step-up from Tuna. I call it the "Poor Man's Yellow Fin". ;)
slit the connection between the belly and the jaws, right under the gills. depending on the size of the Jack, it may be a little bit up in there, but cut it more towards the belly side. Don't break it's back, you want the heart to keep beating for a bit, and then toss it in the cooler or head down in a bucket. Bucket first of course, just so you don't get the cooler to be a bloody mess. Point it away from you, cause some times it does spurt a bit and will ruin your jeans. (lol)

Just caught some small Jack 5/6/17 , Remove skin and dark red meat from under skin and this is good eating fish. Fried it and oven grilled it with a spicy barbecue sauce. Maybe the larger ones suck, but the small ones we caught were great.
I did a catch and cook on the beach down here in Naples on a Jack Cravelle and it was not good for me. Be interested in seeing what you say... I ate it once and have avoided since. Maybe mine was a little bigger. I cooked it the same as you and mine was definitely FISHY.
In Barbados their know as a crab cavali because of their texture, and in Barbados we eat all sorts of fish, my favorite fish to eat is a bar jack but their know as rainbow cavalis

The small Jacks you don't really need to worry about. I bleed fish on a daily basis for my charter clients. You for sure need to bleed big fish. Thanks for watching.
You mentioned not knowing what the big ones taste like. The bigger ones around 8 pounds and up are disgusting. Small ones are fantastic, I keep them whenever I get them. Once they get close to double digits for weight though they taste extremely fishy and are not at all enjoyable. Give a big one a shot if you'd like but I didn't like them big.

I've eaten jack Crevalle up to 20" fork. I bleed them and cut out the blood line they make great tacos
