I mince left over roast lamb ( with rosmary and honey), mix with onions, some GOOD lamb stock and bisto to make a lovely mince to go with mash and veg. We call it "cow pat" as it looks repulsive but tastes amazing. At no point is it soup though.

Could've browned the beef first then made the soup portion in the same pot. Nothing really needs to change drastically, it just consists of altering the order of operations. Otherwise, I might try something similar at some point; never had beef soup with pasta before since the soup was always made with potatoes.
As an italian born in Italy i can say that the pasta is the last of the problems in this video. The thing that disturbs me most besides the boiled minced meat is the total absence of any spice, or even just garlic or onion, it's devastating.
