Ingredients:
Oven Roasting:
- 4 roma/ vine tomatoes (580g/ 1.3lb)
- 1/4 white onion
- 2 tbsp olive oil
- 5-6 cloves of garlic
- 1/4 tsp dried or fresh rosemary
- 1/4 tsp salt
- 1/4 tsp pepper
Bake at 400F/205C for 25-30 min
For Blending:
- 3/4 cup coconut milk
After Blending:
- salt & pepper to taste
- 1/4 tsp smoked paprika
- 1/4 tsp sugar or maple syrup
1 Grilled Cheese:
- 1 brioche bun, sliced
- 1 provolone cheese slice
- 3 tbsp mexican cheese blend, shredded
- butter
