    Ingredients
    1/4 Cup Olive Oil
    1 Large Onion, halves and sliced
    2 celery stalks, chopped
    2 carrots, chopped
    1 tbsp minced garlic
    Salt and Peepper
    1 Cup of Farro
    2 Cups
    chopped tomatoes
    6 Cups of Broth/ stock
    2 Cups of cooked or canned of white beans, drained
    1/4 Cup of parsley
    1 Cup grated parmesan cheese
