    I just wanted to compliment your editing. The way you show shots of performing various tasks as you describe concepts is incredible. No other UA-camr pulls this off like you do. We either have to watch them talk or work in silence. Your videos are rarely silent, and always active. Really great work mixing things up like this. It makes for a very enjoyable experience.

    Funny story., many years ago I tried roasted beets, it was the first time I had tried beets any other way than pickled. I loved them so much I must have eaten 4 or 5 of them, they're delicious.
    The next day of course I had forgotten that I had eaten them with dinner and while taking care if my "morning business" thought I had massive internal bleeding due to the color left in the porcelain.

    Good day Mark. You forgot one more tip: beets prefer alkaline soil and therefore really like ash. I just put ash from wood burning around beets and they grow bigger and better then without it.

      Italians put all their wood ash in the soil during the winter. It is speculated that they were rated as the healthiest in the world because of it ....... but Zi really think it is because of the pasta and bread 😋

    As a chef, my tip is to leave a few centimeters of roots and stems on your beets. This reduces colour bleed when you boil or bake them. Unless you want the colour for some other purpose of course, then chop them off.

      Yes, I've always done that but a lot of grocers sell beets that have the tops completely cut off, so they can sell the tops for more. I find these are old and like boiling rocks.

      I have fried, baked, roasted and boiled beets and have never ever had the color run out of them.

      While this is true, if you let them callous over, they bleed a bit less I've found, but to be fair that's my personal very fresh produce that I also store for a bit. But I do like to keep the tips on, they're like fun little blood carrots! :)

      @@jillhumphrys8073 Yeah I've never had a problem with it. In the last couple of years I've been experimenting with White Beetroot and
      Burpees Golden Beetroot. They taste different from the red which I still grow as well sometimes I cook the three and have them on the same plate I also use the leaves in stir fries and salads and with cooked meals . I don't cook the leaves I prefer them..... natural. As I stated at the start I've never had any Beetroot bleed

    Stir fry the leaves with a chopped chilli, garlic and some chopped ginger. Turn down the heat and let steam for a couple of minutes. Food of the gods. Roast the beets on a bed of star anise, peppercorn fennel seed or whatever fragrant seeds you have, add some goats cheese once the beets are warm and drizzle over olive oil and balsamic; you need nothing else

      Here in NWArkansas, USA, we like a like potatoes fried with onion. I like to dice beets and pan fry them with onions, salt pepper, and rosemary! They come out glossy and sweet! I also cook carrots that way!

      Heidi, yes I do them in the oven at 180C. I don't season my roast veg while cooking, but that's personal taste.

    Beetroot is loaded with the antioxidant lycopene, which is great for prostate health.
    Make a chocolate cake the way you would a carrot cake, swapping the carrot with beetroot. YUMMY!
    Borshch/borsht/barszcz is a great soup and there are more variants to it than a cat has hairs- with and without meat.

      And I hate to tell you this but if you are after lycopene in your food beets are the absolute worst. There are 0 μg of lycopene in 100g of beets aka. beets have no lycopene.

    Here in Ukraine it's one of the staple veggies, grown in massive amounts. It's really cheap and is used in traditional cuisine. The one way we usually don't eat is pickling, haha.

      I'm, NWArkansas, USA, we commonly fry diced potatoes in a skillet with onions. Some people call them home fries or cottage fries. I discovered that frying beets this way with onions, salt and pepper are so good! Give it a try! Eat them as a side dish to just about anything, but burgers or any kind of BBQ are the best. Also, I make a roasted root vegetable dish at Christmas and beeta are included. Just dice, toss them in olive oil, salt pepper and rosemary and roast in a single layer for 45 minutes at 375 degrees.

      @@jillhumphrys8073 Thanks for the tip, I am going to try that! Overhere in the Netherlands I like to make a salad out of them. Boil the beets for about 40 min. and after that peel them en chop them into cubes. Then chop an onion into very little pieces add that to the beets and add some mayonaise pepper and salt to taste and some drops of worshestershire sauce. Very nice with a barbeque on a hot day!

    I grew up in a Mexican household eating beet like carrots.
    "Mexican household" meaning, we chopped them up and added lemon, salt and chilly powder (or Valentina sauce) then ate it with a fork like a salad. We also added chopped up carrots, jicama, tomato, cucumber, mango, celery, cilantro, etc. Basically any fruit or veggie we wanted and found in the fridge. 🙊
    Beets are a bit harder to cut than carrots or jicama but they're just as delicious 😋
    I have never seen "pickled beets". The only beet product I've seen in Tijuana is canned beets just like canned corn. Basically cut and cooked in a slighty salty brine. Never saw them again🤣

    Hey Mark! I grew beetroot for the first time last year and the leaves were so shiny. It was as if someone came into my garden overnight and polished them. Your viewers should be warned that the difference between store bought and home grown beetroot is immense. We did dine out on the young leaves for a long time before accessing the roots. The roots of freshly picked beetroot are rich if they are not pickled. Hardly anything to complain about because home grown is best and a large pot is all you need to start. This season I am trying an Italian style of Beetroot with concentric pink/red and white rings when you cut into them. I think they are called Pioggia. Cheers!

      @@gifgloria Mostly it is a very long To Do List of things that I do in the garden. e.g. What and when and how many seeds sown, transplanted, seedlings or starts purchased and when they were planted. What fertilisers, compost or other additives I add to the soil to improve soil health. How well each vegetable or fruit went in a particular season. Harvest dates to anticipate but the most important of all is Observation which includes a weather forecast. If you just get out and observe your garden, you can discover so many things, flowers, beneficial insects, pests, diseases, relaxation and pride in what you have accomplished. I think it kept me sane during the pandemic and it helps overcome the fear of not knowing what works well in your garden.

Also, I'm doing some soil experiments and am keeping track of those. I have lots of learning ahead of and do appreciate those who are willing to share their journeys and recommendations.     Love the colour of beets Mark as much as the colour of blackberries, don't forget that store bought beets can be planted and they will keep growing if you keep chopping their tops off for salad, a better place to store them is in the ground I have found instead of my fridge when I buy them from the farmer's markets with their roots and tops in tack, then I just pick at my own leisure to use...

    You can't talk about cooking beets without mentioning Borscht, a delicious beet soup which is a traditional Ukrainian dish. Many other cultures have their own version of this soup. My grandma used to make the soup and added a cheap cut of meat, a great way to stretch your dollar. I also love the orange yellow variety of beets, cubed with a little butter and salt, placed on the bbq while you cook your meat; so delicious.

    We have two crops of beets a year - one in the early spring, and one in the fall. We will be harvesting our fall crop in a couple weeks. Can't have too many beets!

    Beetroot really does benefit from a wicking bed. They can regulate their own water usage - they like the damp (ish) but not wet soil. I learned a lot from this though, particularly regarding planter the seeds as is.

    The kids plucked one of our small (a bit bigger than a golf ball sized) beat, so I peeled the it, washed it, and thought, let me taste what it will be like fresh and raw like that, and remarkably, I never tasted a beatroot that juicy before and it also has a very plumb-like taste for that matter.

    They are sooo good roasted. 1" chunks coated in olive oil with salt and pepper 350...? 30-45 mins till can pierce with a fork.

    Very nice sir.I am fond of kitchen gardening.I also sown beetroots , after one week ,i shall pick them out.Its very easy to grow spinach,beetroot ,radish ,fennugreek and carrots.Its really enjoying to have these veggiez in our kitchen garden.

    I love the beet greens! I fry them with eggs, and add them with my other greens cooked in stock. I see all those greens on the ground and panic lol. Eat them too!

    I use the root, stems and leaves in my borscht.
    Water, beet parts, onion, sugar, white vinegar, garnish with sour cream. Simple but _delicious!_ (If you like picked beets you'd like my borscht.)

    You can plant tiny beets again, and just water them in real well.
    They just keep growing beautifully.
    I have done so with tiny store bought beets, that looked semi dry and crummy, and they grew beautifully, most bolted and gave me seeds too. The beet roots were still edible, and much larger too.

    Perfect-sized beets. Great advice re: spacing. I grow beets tight too, but using Charles Dowding's multi-sown plugs. Next year I'll experiment your method, sowing in place. Anyway, as usual, a well-produced video with thoughtful editing, That's what makes your channel one of my top-2 gardening channels.     Mom is Dutch, and the lowlands love their mayo. I grew up with grated beets w/ a dollop of mayo, really easy way to get your kids to eat them because of the neon red color. Boil 4 or 5 medium beets until a fork can prick through the skin, maybe an 1/8 in. deep. Cool, peel and grate into rinsed out pot (1 pot dish) and return to stove over low heat. Mix in about (I don't measure, too lazy) 2 Tbsp cider vinegar and sugar and mix until sugar is dissolved. Plate and add a bit of mayo and mix.

    When you peel beets for eating use their peels to fertilize tomatoes. Even water from cooking beets.

      You must preserve them and don’t give them all away. A great preserving group on Facebook is Fowlers Vacola users. It’s best for Aussies.

      When I cook the beets, I wash them really good and the water I use for my drinking daily instead of just throwing it or for my plants/vegetables, it’s replenish and hydrate ur body, the same when I boil my corn, I drink the water from boiled corn, I removed the husk of course or remove the layers that is dirty. It’s sweet and good for you. 😇👍👍

    I love love beetroot! I never have enough beetroot leaves though as I love to add them to my daily salads as they‘re so yummy and nutritious. I eat low carb so the leaves are more important than the roots to me although I ferment the roots to lower the carbs in the roots so that I can enjoy them occasionally...

      Italians eat a high carb diet, they are thin, health and live the longest...... so why they say to eat low carb diets? Because they want you to have low energy snd be sick........ oh but I avoid gluten / carbs and I feel better. ...... NO NO. You avoid junk you buy in the supermarket (which is imitation of real food) and therefore feel better. The body’s easiest food to process into energy is a carb. For Everything else it needs to use complicated system to get the glucose it needs.

    You can also ferment in a brine for making kvass. Delicious to drink and the roots taste great. Much less sour than pickled beets, with a more complex flavor. Extremely healthy and full of enzymes

Please like and subscribe, there are too many popular gardening channels that are full of hype, poor advice and product placement. Please support this guy, people need to see this. Also, as a Russian, I consume tons of beets and what he says about the flavor is true. Try a roasted beet or a boiled and cooled down beet in your veggie salad. It is a superfood.

    Just a tip for future reference, may help you put less effort into the beets however achieve same result. The size of your raised beds are enough to sustain beets for 3/4/5 seasons. They don’t need to be as wet as you’re seeming to keep them, understand the top inch dry doesn’t mean the whole raised bed isn’t moist the next 3 foot down, especially if you’ve added material to hold moisture. Overwatering will however cause you to need to add more amendments/nutrients within the next year or so as you’ll wash it all down through the raised bed, leaving only the drained sandy loamy ish bits of sand/dirt.
    So tip, understand what moisture is, then you won’t have the issue of needing to water BEETS everyday, as well as re amending your soil for BEETS, so often. My point here is that you’re growing BEETS, one of the easiest things to grow, simplify it a bit, it WILL actually save you time and effort with this

    I love to grow the cylinder long beets instead of the round ones. Need less space and still can give a big crop and never had them turn woody.

    There is more than a few varieties. One I got, Chicagoga (probably not spelled right) or the Candy-Cane as one could call it, had red and white stripes that could liven up a salad - but you need to serve it raw for the effect to really work. Another, a yellow variety, is useful to keep the "red" juice from coloring everything else, as its juice isn't as obvious. Then another is more cylindrical than ball-shaped. Still waiting on them, as, based on a few that the deer/rabbits have pulled, they're still small. Same with the carrots, based upon a few I accidentally pulled while weeding, but they were tasty.

      try a motion detector with a light bulb on one side, and a radio plugged into the other; when a deer gets close, the light and radio come on at the same time. the deer will split, i guarantee it! talk radio is best, i put the radio in a bucket; strap it in, and place it upside down on a pole of some sort.

    Last summer in Germany it was very dry again. The areas where the beets grow tight in cluster works much better then in thin rows.
    They needed less water and grow much healthier and bigger. I harvested the every second beet, so that the remaining ones had the oprtunity to grow bigger without deformation.

    When you pull beet from ground and take off the leaves, you should leave about 2 inches of leaf stem from the beetroot so when you cook the beet all the color stays in the beetroot. You will still have red bleed from the beetroot, but not as bad.

    I love that Australians put pickle beets and fried eggs in hamburgers. If I go to Mt Magnet I always get a deluxe burger. Australian also call beets beetroot.

    I grow and can many organic beets every year. They are nutritious, also the leaves are one of the healthiest things to eat. I mix some leaves in with lettuce and other herbs and things for a garden salad. I discovered that the goldfinch birds like to eat beets leaves and stems. They don't do much damage and are nice to have around. I have a few that I see daily in my beet patch.

    I've said it before but say it again, MARK, YOU ARE GREAT. Just want to day, I peeled three big beets last week and grated them, RAW, and took a large onion snf sliced it very thin, put some vinegar litle sugar and bit of water in a pot, boiled it till the sugar melted and took it off of the heat and let it cool down.

    I detested beets until my lovely young bride of 38 years bought fresh, boiled them until almost cooked, and served with butter. Yummy! Now I freeze dry the 'left overs' for later. Thanks for the video and information. Trying to grow my own for the first time.

    Lol Beetroot, funny I grow them for the tops. I use the waste from my guinea pigs cage . They are vegetarians so it is safe. Agreed why would I thin them ,hell no I'm not going to pull up and kill something I planted. I work graveyard been up all day had to watch one more of your videos , I'm beet.

    I love beets as a salad.
    1. You boil the beets, then let them cool down. You can use beets taken from your Borsch.
    2. Shred them using the large size grater.
    3. Add some salt, sugar and citric acid (you can use lemon, but citric acid gives better taste).
    4. Enjoy. You can store it in the fridge for a few days.

    Most people 🙄 I know, here in Ky, love pickled beets. They are more like a relish served with bean soup or on a salad. I'm very happy to have a jar in my refrigerator all of the time.
